A fresh and zesty Lemon Parmesan Salad featuring crisp romaine and iceberg lettuce tossed in a tangy lemon vinaigrette, enriched with shredded parmesan and subtle shallots, perfect for a light and flavorful side dish or appetizer.

  • Total Time: 10 minutes
  • Yield: 4 servings

Ingredients

Dressing Ingredients

  • 2 lemons (juiced)
  • 1 lemon (zested)
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon black ground pepper
  • ¼ teaspoon red pepper flakes (optional)

Salad Ingredients

  • 2 romaine hearts (chopped)
  • 3 cups iceberg lettuce (chopped)
  • 1 cup parmesan cheese (grated or shredded, divided)
  • 2 shallots (sliced)
  • ½ teaspoon cracked black pepper

Instructions

  1. Prepare the Dressing: In a bowl, combine the lemon juice, lemon zest, extra virgin olive oil, coarse kosher salt, black ground pepper, and red pepper flakes if using. Whisk thoroughly until the dressing is fully emulsified and well blended.
  2. Prepare the Lettuce: Wash and dry the romaine hearts and iceberg lettuce thoroughly to remove any dirt and excess water. Chop them into bite-sized pieces and add to a large salad bowl.
  3. Add Parmesan and Shallots: Add the grated or shredded parmesan cheese and the sliced shallots into the salad bowl with the lettuce. Reserve 2 tablespoons of parmesan cheese to use as a topping at the end.
  4. Toss the Salad: Pour the prepared lemon dressing over the salad mixture. Toss everything gently but thoroughly until the lettuce, shallots, and cheese are evenly coated with the dressing.
  5. Garnish and Season: Sprinkle the reserved 2 tablespoons of parmesan cheese evenly over the top of the salad. Follow by adding cracked black pepper for an extra layer of seasoning.
  6. Serve Immediately: Serve the salad right away to enjoy the fresh crispness and tangy flavors at their peak. This salad pairs excellently with grilled meats or as a light standalone dish.

Notes

  • Use fresh lemons for the best zesty flavor in the dressing.
  • Ensure the lettuce is well dried to prevent a soggy salad.
  • Adjust red pepper flakes quantity based on desired heat level or omit for milder flavor.
  • Parmesan cheese can be substituted with Pecorino Romano for a sharper taste.
  • This salad is best eaten immediately; leftovers may become soggy.
