Ingredients
Chicken
- 2 chicken breasts (cut in half lengthwise)
- Salt (to taste)
- 1 tablespoon olive oil
Sauce
- 2 tablespoons butter (divided)
- 2 cloves garlic (minced)
- 1 tablespoon flour
- 2/3 cup chicken broth
- 1/2 cup heavy/whipping cream
- 1/2 tablespoon lemon pepper
Instructions
- Prepare the chicken: Cut the chicken breasts in half lengthwise to create 4 thinner chicken pieces. Lightly sprinkle both sides with salt, being cautious if your lemon pepper blend already contains salt.
- Heat the pan and sear chicken: Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-high heat. Allow the pan to get hot before adding the chicken.
- Sear the chicken: Place chicken pieces in the pan and cook for 4-5 minutes on each side until golden brown. Then remove the chicken and set aside on a plate.
- Make the sauce base: Add the remaining 1 tablespoon butter to the pan and let it melt. Add the minced garlic and sprinkle the flour over it. Cook while stirring for 30 seconds to 1 minute to develop the roux.
- Add liquids and seasoning: Pour in the chicken broth, heavy cream, and lemon pepper seasoning. Whisk continuously for about a minute until the flour dissolves fully and the sauce starts to thicken.
- Finish cooking chicken in sauce: Return the chicken and any accumulated juices back to the skillet. Simmer gently for 4-5 minutes, or until the chicken is cooked through (internal temperature 165°F) and the sauce has thickened to your liking. Reduce heat if the sauce is boiling too vigorously. Adjust seasoning with extra salt and pepper if needed.
- Serve immediately: Plate the chicken and spoon the creamy lemon pepper sauce over the top. Enjoy this delicious dish while hot!
Notes
- Make sure not to overcook the chicken to keep it juicy and tender.
- If lemon pepper blend contains salt, reduce added salt accordingly.
- For a thicker sauce, let it simmer a bit longer; for thinner sauce, add a splash more chicken broth or cream.
- This recipe pairs well with steamed vegetables, rice, or mashed potatoes.
- To verify doneness, use a meat thermometer ensuring chicken reaches 165°F internally.
