Tender and flavorful Lemon Pepper Chicken Thighs marinated in a zesty blend of lemon juice, olive oil, honey, and aromatic spices, then baked to juicy perfection. This easy, comforting dish features bone-in, skin-on chicken thighs topped with lemon slices and fresh parsley, perfect for a weeknight dinner or casual gathering.

  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

Chicken

  • 6 bone-in chicken thighs (skin-on)

Marinade & Seasoning

  • 1/2 lemon, juiced
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons parsley, chopped (plus extra for garnish)
  • 1 tablespoon honey
  • Zest of 1 lemon
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon seasoning (optional)

Garnish

  • Thin lemon slices (from 1 lemon)

Instructions

  1. Prepare the marinade: In a small bowl, mix together the lemon juice, lemon zest, extra virgin olive oil, parsley, honey, lemon pepper seasoning, red pepper flakes, garlic powder, onion powder, salt, and optional chicken bouillon seasoning until well combined.
  2. Marinate the chicken: Coat the bone-in, skin-on chicken thighs thoroughly with the prepared marinade. Cover and let them marinate for at least 30 minutes or up to overnight in the refrigerator to absorb the flavors.
  3. Preheat the oven and arrange chicken: Preheat your oven to 375°F (190°C). Slice a lemon into thin rounds and place the slices evenly on top of the marinated chicken thighs in a baking dish.
  4. Bake the chicken: Bake the chicken in the oven for 35 to 40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  5. Rest the chicken: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute, keeping the meat moist and tender.
  6. Garnish and serve: Sprinkle additional chopped parsley over the chicken for freshness and color. Serve hot with your favorite side dishes such as roasted vegetables, rice, or a green salad.

Notes

  • Marinating the chicken overnight will intensify the lemon and herb flavors.
  • Adjust red pepper flakes to your spice preference or omit for less heat.
  • Use bone-in, skin-on thighs for juicier, more flavorful results; skinless can be used but the texture will differ.
  • Ensure chicken is cooked to a safe internal temperature of 165°F (74°C).
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
