Ingredients
Vegetables
- 1 yellow onion, diced
- 2 stalks celery, diced
- 1 large carrot, diced
- 5 oz. mushrooms, diced
- 8 oz. white potato, diced
- 4 cloves garlic, minced
- 1-2 cups fresh baby spinach, roughly chopped (optional)
Pantry
- 15 oz. can diced tomatoes (or fire-roasted)
- 6 cups vegetable broth
- 1 cup green or brown lentils, rinsed and drained
- 1 1/2 tsp. Italian seasoning
Instructions
- Prepare Vegetables: Dice the onion, carrot, and celery, then separately dice the mushrooms and potato. Set all aside.
- Sauté Base Vegetables: Heat a stockpot over medium-high heat and add the diced onion, carrot, and celery. Sauté for about 7-8 minutes using 3 tablespoons of water or vegetable broth as a no-oil cooking method, adding more liquid as needed to prevent sticking.
- Prepare Garlic: While the base vegetables cook, mince the garlic cloves finely.
- Add Remaining Vegetables and Seasoning: Once the onion is translucent, add the minced garlic, diced mushrooms, diced potato, and Italian seasoning. Stir and sauté for another 2-3 minutes to develop flavor.
- Add Liquids and Lentils: Pour in the diced tomatoes with their juice, vegetable broth, and rinsed lentils. Increase the heat to bring the soup to a light boil.
- Simmer Soup: Reduce heat to low, cover the pot, and simmer gently for 25-30 minutes, or until the lentils are tender and cooked through.
- Add Spinach and Season: In the last few minutes of cooking, stir in the roughly chopped spinach if using. Adjust seasoning with salt and pepper to taste before serving.
Notes
- Using water or vegetable broth for sautéing keeps the soup oil-free and healthy.
- If you prefer a thicker soup, you can blend a portion of the soup before adding the spinach.
- Lentils do not require soaking and cook quickly, but rinsing is important to remove any debris.
- Fire-roasted diced tomatoes add a smoky depth of flavor but regular diced tomatoes work well too.
- For a protein boost, add a pinch of red pepper flakes or a sprinkle of grated cheese when serving (if not vegan).
