Ingredients
For the Chips
- 5 yellow corn tortillas
- 3 cups vegetable oil (for frying)
- Salt, to taste
For the Beef
- 1 pound ground beef
- 3 tablespoons taco seasoning (prepackaged or homemade)
- 2/3 cup water
- 1 tablespoon vegetable oil
Toppings
- 8 ounces colby cheese, shredded
- 2/3 cup seasoned refried beans
- Sour cream, for serving
- Pico de gallo, for serving
- Avocado, sliced, for serving
- Pickled jalapeno, for serving
Instructions
- Preheat and Prepare Chips: Preheat your oven to 425°F. Cut each yellow corn tortilla into thirds (or fourths if preferred for smaller servings). Heat 3 cups of vegetable oil in a cast iron skillet or dutch oven over medium heat until it reaches 350°F, approximately 10 minutes.
- Fry the Chips: Test the oil temperature by frying one tortilla piece; it should sizzle and crisp within moments. Fry 4 tortilla pieces at a time for 45 seconds on each side until golden and crispy. Remove and drain on paper towels. Immediately sprinkle with salt. Repeat with remaining tortilla pieces.
- Cook the Beef: Heat 1 tablespoon vegetable oil in a pan over medium heat. Add ground beef and cook thoroughly until browned. Drain any excess fat, return to medium heat, and add taco seasoning and 2/3 cup water. Stir well and bring the mixture to a boil.
- Simmer the Beef Mixture: Reduce heat to a simmer and cook uncovered until the mixture thickens and the water evaporates, intensifying the flavors. Remove from heat once thickened.
- Assemble the Nachos: Arrange the fried tortilla chips in a single layer on a large baking sheet. On each chip, spread about 1 1/2 teaspoons of refried beans, then add 1 1/2 tablespoons of the seasoned ground beef. Sprinkle shredded colby cheese over each chip individually until the cheese is evenly distributed.
- Bake: Place the baking sheet in the preheated oven and bake for 5 minutes, or until the cheese has fully melted over the toppings.
- Serve: Serve the loaded nachos immediately with your favorite toppings including sour cream, pico de gallo, avocado slices, and pickled jalapenos for an authentic Texan flavor experience.
Notes
- Cutting the tortillas into thirds instead of fourths yields slightly larger chips and portions.
- Maintain the oil temperature at 350°F for perfect crispness without greasiness.
- Use a cast iron skillet or dutch oven for even heating when frying chips.
- Seasoned refried beans add a creamy texture and depth of flavor.
- Customize toppings to your preference; adding jalapenos gives a nice spicy kick.
- Serve immediately after baking to enjoy the chips while they’re crispy and the cheese is melted.
