Ingredients
Beans and Sausage
- 1 lb. dry red beans
- 2 Tbsp cooking oil
- 14 oz. Andouille sausage
Vegetables and Aromatics
- 1 yellow onion
- 1 green bell pepper
- 3 ribs celery
- 4 cloves garlic
- 3 green onions (for garnish)
Spices and Herbs
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 tsp freshly cracked black pepper
- 2 bay leaves
- 1/4 cup chopped parsley
- 1 Tbsp salt, or to taste
Rice
- 1.5 cups long grain white rice, uncooked
- 3 cups water (for cooking rice)
Other
- 6 cups water (for cooking beans)
Instructions
- Soak the Beans: The night before cooking, place the dry red beans in a large bowl and cover with double their volume in water. Soak them overnight in the refrigerator to soften.
- Cook the Sausage: Slice the Andouille sausage into rounds. Heat the cooking oil in a large pot over medium heat, add sausage slices, and cook until browned. Remove the sausage with a slotted spoon and set aside in the refrigerator.
- Prepare Vegetables: While the sausage cooks, dice the onion, green bell pepper, and celery, and mince the garlic.
- Sauté Vegetables: In the same pot (you may drain some fat if preferred), add the diced onion, bell pepper, celery, and minced garlic. Sauté over medium heat until the onions become soft and the vegetables release their moisture, scraping up any browned bits from the pot bottom.
- Add Spices: Stir in smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and bay leaves. Cook for an additional minute to toast the spices.
- Add Beans and Water: Drain and rinse the soaked beans. Add the beans and 6 cups of water to the pot. Stir to combine.
- Simmer Beans: Cover with a lid and bring the pot to a boil over medium-high heat. Once boiling, reduce heat to medium-low and let simmer, covered, for 1 hour, stirring occasionally and replacing the lid each time.
- Thicken Beans: After 1 hour, test the beans for tenderness. Using the back of a spoon, begin smashing some beans against the side of the pot. Continue smashing and simmer uncovered for 30 minutes to thicken the mixture.
- Cook Rice: While the beans simmer uncovered, prepare the rice. In a separate sauce pot, combine the rice and 3 cups water. Bring to a boil over high heat, then reduce heat to low. Cover and simmer for 15 minutes. Turn off heat and let rice rest, covered, for 5 minutes. Fluff with a fork before serving.
- Finish the Beans: Return the cooked sausage to the pot with the beans. Stir in chopped parsley and season with salt, starting with 1 teaspoon and adjusting to taste, up to 1 tablespoon.
- Serve: Plate the red beans in bowls topped with a scoop of rice and garnish with sliced green onions.
Notes
- Soaking the beans overnight reduces cooking time and improves digestibility.
- You can drain excess sausage fat before sautéing vegetables if you prefer a less greasy dish.
- Adjust cayenne pepper and other spices to suit your preferred heat level.
- This dish is great for leftovers and freezes well for up to 3 months.
- Use Andouille sausage for authentic smoky flavor; smoked sausage can be a substitute.
- Be patient with simmering - it allows flavors to meld and beans to soften perfectly.
