These Lucky Charms Sugar Cookie Truffles are a fun and festive treat combining the sweet flavors of sugar cookies, Lucky Charms cereal, and creamy white chocolate. Perfect for celebrations or a sweet snack, these bite-sized truffles feature a hidden marshmallow center and a smooth white chocolate coating, making them irresistible and delightful.

  • Total Time: 55 minutes
  • Yield: 20 servings

Ingredients

Base Ingredients

  • 1 cup Lucky Charms cereal
  • 20 sugar cookies
  • 5 oz cream cheese, softened to room temperature
  • 1 tsp vanilla extract

Coating & Decoration

  • 2 cups white chocolate, candy melts, or vanilla almond bark
  • 20 Lucky Charms marshmallows
  • Green food dye (optional)

Instructions

  1. Pulse Ingredients: In a food processor, pulse together sugar cookies and Lucky Charms cereal until fine crumbs form. Remove 1 tablespoon of sugar cookie crumbs to use later for decorating.
  2. Add Cream Cheese: To the fine crumbs, add the softened cream cheese and pulse until the mixture is evenly combined and forms a dough.
  3. Mix in Vanilla: Add vanilla extract and mix well to incorporate the flavor thoroughly.
  4. Form Balls: Line a large cookie sheet with parchment paper. Using a cookie scoop or your hands, scoop out small balls of the dough, about 1 tablespoon each.
  5. Insert Marshmallow: Flatten each dough ball in your hand, place a Lucky Charms marshmallow in the center, fold the dough around it, and roll into a smooth ball.
  6. Freeze: Place the truffle balls on the cookie sheet and freeze for 20 to 30 minutes to firm up.
  7. Melt Chocolate: Melt the almond bark, candy melts, or white chocolate in a microwave-safe bowl in 15-second increments, stirring well after each, until fully melted and smooth.
  8. Dip Truffles: Using a fork, dip each truffle into the melted chocolate, coating it completely. Gently tap the fork on the edge of the bowl to remove excess chocolate.
  9. Set on Baking Sheet: Use a toothpick or metal cake tester to gently push the dipped truffle off the fork onto the baking sheet to set.
  10. Decorate with Drizzle: If desired, tint any remaining melted chocolate with green food coloring. Pour into a piping bag or ziplock bag and drizzle over each truffle for decoration.
  11. Sprinkle Crumbs: Sprinkle the reserved cookie crumbs on top of the truffles to add texture and visual appeal.
  12. Chill and Store: Refrigerate the truffles before serving. Leftovers can be stored in the fridge or freezer to maintain freshness.

Notes

  • Be sure the cream cheese is fully softened for easier blending and a smoother texture.
  • If you do not have a food processor, crushing the cookies and cereal finely before mixing can work as an alternative.
  • Use parchment paper to prevent sticking during freezing and chocolate setting.
  • Microwave melting in 15-second increments prevents burning the chocolate.
  • For a festive touch, try using different colored candy melts for coating and drizzle.
