This classic Maine Lobster Roll recipe features tender lobster meat gently tossed in a light, creamy dressing with celery, lemon, and chives, then nestled into buttery toasted split-top buns. A perfect summertime sandwich that highlights fresh seafood flavor with minimal fuss.

  • Total Time: 19 minutes
  • Yield: 4 servings

Ingredients

  • 2 tablespoons unsalted butter, at room temperature
  • 1/4 cup mayonnaise, plus more as needed
  • 2 medium stalks celery, finely chopped (about 1/2 cup)
  • 2 tablespoons finely chopped fresh chives (optional)
  • 1 tablespoon freshly squeezed lemon juice (from 1/2 medium lemon), plus more as needed
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1 pound fresh or thawed frozen cooked Maine lobster meat (about 3 1/2 cups)
  • Freshly ground black pepper, to taste
  • 4 split-top hot dog buns
  • 4 large Bibb lettuce leaves (optional)
  • Lemon wedges, for serving

Instructions

  1. In a medium bowl, stir together mayonnaise, chopped celery, chives (if using), lemon juice, and kosher salt until well combined.
  2. Pat the lobster meat dry with paper towels, then cut into bite-size pieces. Gently fold the lobster into the dressing. Taste and adjust seasoning with salt, pepper, and additional lemon juice as needed. Refrigerate while you prepare the buns.
  3. Spread the cut sides of the split-top hot dog buns with butter. Heat a skillet over medium heat. Place buns butter-side down in the skillet and toast for about 3 minutes per side until golden brown. Let cool slightly.
  4. Gently open the toasted buns and line each with a Bibb lettuce leaf (if using). Spoon the chilled lobster mixture evenly into each bun.
  5. Serve immediately with lemon wedges on the side.

Notes

  • Use high-quality fresh or frozen Maine lobster meat for the best flavor.
  • Split-top buns are traditional, but you can use any soft hot dog bun if needed.
  • Chill the lobster salad for at least 10 minutes before serving for optimal flavor.
  • Lettuce helps keep the bun from getting soggy, but it is optional.
  • Add a touch of hot sauce for a spicy twist.
