Deliciously sweet and tangy Mango Crumb Bars featuring a buttery crumb crust and a luscious mango filling, perfect for a refreshing dessert or snack.

  • Total Time: 55 minutes
  • Yield: 9 servings

Ingredients

Filling

  • 2 1/2 cups ripe mangoes (small chunks, about 2-3 mangoes)
  • 3-5 tbsp granulated sugar (adjust based on mango ripeness)
  • 1/2 tbsp corn starch

Crumb Base and Topping

  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup cold unsalted butter (cut into cubes)
  • 2/3 cup brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
  2. Prepare Mango Filling: Cut ripe mangoes into small chunks. In a bowl, combine the mango chunks with granulated sugar (adjust quantity according to fruit sweetness) and corn starch. Mix well to coat evenly and set aside.
  3. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, and salt for the crumb base.
  4. Incorporate Butter: Add cold unsalted butter cubes to the flour mixture. Using a food processor, pulse until the mixture forms small crumbs. Alternatively, use a pastry cutter to blend the butter into the flour until crumbly.
  5. Add Wet Ingredients: In a separate bowl, mix together the brown sugar, egg, and vanilla extract. Pour this wet mixture into the crumbly butter-flour mix and stir well. The dough should remain slightly crumbly but hold together when pressed.
  6. Form Base Layer: Reserve about two-thirds of the crumb mixture. Press it firmly into the bottom of an 8" x 8" baking pan lined with parchment paper, creating an even crust layer.
  7. Add Mango Filling: Spread the prepared mango mixture evenly over the crumb base layer.
  8. Top with Crumbles: Sprinkle the remaining one-third of the crumb mixture over the mango filling as a topping.
  9. Bake: Place the pan in the preheated oven and bake for 35-40 minutes, until the crumb topping is golden and the mango filling is bubbly.
  10. Cool and Serve: Remove from oven and let cool for 5-10 minutes in the pan. Then lift the bars out using the parchment paper and allow to cool another 15-20 minutes on a cooling rack. Cut into 9 squares and serve.

Notes

  • Use ripe mangoes for the best flavor and sweetness.
  • Keeping the butter cold ensures a crumbly texture in the crust and topping.
  • Adjust sugar quantities based on the sweetness of your mangoes.
  • Let the bars cool completely before cutting for cleaner slices.
  • These bars store well in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
