Ingredients

  • Curry Paste:
  • 1 teaspoon ground cumin
  • 3/4 teaspoon ground coriander
  • 2 teaspoons ground ginger
  • 3/4 teaspoon white pepper
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 3–4 Fresno chilies, seeded and chopped
  • 1 1/2 tablespoons lemongrass paste
  • 4 garlic cloves
  • 1/2 red onion, diced
  • 7 cilantro stems
  • 1/2 tablespoon miso paste
  • 1 teaspoon brown sugar
  • 1 tablespoon fresh lime juice
  • Water as needed
  • Curry:
  • 3 pounds cubed beef chuck
  • 3 tablespoons cornstarch
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons vegetable oil
  • 14 ounces full-fat coconut milk
  • 2 cups beef broth
  • 1 yellow onion, thinly sliced
  • 1 1/2 pounds baby gold potatoes, halved
  • Roasted peanuts and chopped fresh cilantro for garnish

Instructions

  1. Blend curry paste: In a blender, combine cumin, coriander, ginger, white pepper, cardamom, cloves, cinnamon, salt, chilies, lemongrass paste, garlic, red onion, cilantro stems, miso paste, brown sugar, and lime juice. Pulse to form a paste, adding water as needed.
  2. Season beef: Toss beef cubes with cornstarch, salt, and black pepper.
  3. Brown beef: Heat oil in a large saucepan over medium-high heat. Sauté beef until caramelized on all sides. Remove or leave in pan.
  4. Make curry: Stir in coconut milk and curry paste, then add beef broth. Combine well.
  5. Simmer: Reduce heat to low, add sliced onion, cover, and simmer for 2 hours.
  6. Add potatoes: Stir in halved baby potatoes, cover, and cook 25 minutes or until potatoes are tender.
  7. Serve: Serve warm over steamed white rice, garnished with roasted peanuts and chopped cilantro.

Notes

  • Add water gradually when blending curry paste to reach a smooth consistency.
  • Use full-fat coconut milk for richness.
  • Beef can be substituted with chicken or lamb if preferred.
  • Serve with steamed jasmine rice for an authentic experience.
