Ingredients
Dry Ingredients
- 3 cups (375g) all-purpose flour (spooned & leveled)
- 3 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon (optional)
Wet Ingredients
- 1/3 cup (5 Tbsp; 71g) unsalted butter, melted and slightly cooled
- 1/3 cup (80ml) vegetable oil
- 1 cup (200g) granulated sugar
- 2 large eggs, at room temperature
- 1/3 cup (80g) sour cream or yogurt, at room temperature
- 1 cup (240ml) milk, at room temperature
- 1 teaspoon pure vanilla extract
Add-ins and Toppings
- 1-2 cups add-ins of choice (e.g., blueberries, chocolate chips, nuts)
- Optional: coarse sugar for sprinkling
Instructions
- Preheat and Prepare the Pan: Preheat your oven to 425°F (218°C). Generously grease a 6-count jumbo muffin pan with butter or nonstick spray; alternatively, line with muffin liners. Set the prepared pan aside.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and optional ground cinnamon until well combined. Set this bowl aside.
- Combine Wet Ingredients: In a separate bowl, whisk the melted butter, vegetable oil, and granulated sugar until smooth. Add the eggs and whisk until everything is well incorporated. Then whisk in the sour cream or yogurt, milk, and vanilla extract. The mixture should become pale yellow.
- Mix Wet and Dry Ingredients: Pour the wet ingredient mixture into the bowl of dry ingredients. Fold gently using a rubber spatula or wooden spoon until just combined, being careful not to overmix. Use a whisk lightly if needed to eliminate any large lumps of flour. The batter should be thick.
- Add Additional Ingredients: Fold in your choice of 1-2 cups of add-ins, such as blueberries, chocolate chips, or nuts.
- Fill the Muffin Pan: Divide the batter evenly among the muffin cups, filling them completely to the top. For a crunchy topping, sprinkle coarse sugar over each muffin (this is recommended).
- Start Baking at High Heat: Bake the muffins at 425°F (218°C) for 5 minutes to help them rise quickly and form a crust.
- Lower Temperature and Continue Baking: Without removing the muffins, reduce the oven temperature to 350°F (177°C) and bake for an additional 25-30 minutes, until the muffin tops are lightly golden brown and the centers are set. Test doneness by inserting a toothpick into the center; it should come out clean.
- Cool: Allow the muffins to cool in the pan for 10 minutes before serving.
- Storage: Store leftover muffins covered at room temperature for up to 5 days or refrigerate for 1 week. These muffins freeze well for up to 3 months; thaw them in the refrigerator or at room temperature before enjoying.
Notes
- For best texture and flavor, use room temperature eggs, milk, and sour cream or yogurt.
- To prevent overmixing, fold the batter gently until just combined to avoid tough muffins.
- The initial high-heat baking helps the muffins rise quickly and form a desirable golden crust.
- Add-ins like fresh berries, nuts, or chocolate chips can be customized according to taste.
- Coarse sugar sprinkled on top adds a delightful crunch but is optional.
- Store muffins in an airtight container to maintain freshness.
- Allow muffins to cool slightly before removing from pan to avoid breaking.
