Ingredients
For the Steak and Marinade
- 1 lb sirloin steak, about 1-inch thick
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Bowl Base
- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional, for paleo or keto)
For the Toppings
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup kalamata olives, pitted
- ⅓ cup feta cheese, crumbled (optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill), chopped
For the Tzatziki
- 1 cup plain Greek yogurt (or coconut yogurt for dairy-free option)
- ½ cucumber, grated and squeezed dry
- 1 tablespoon fresh lemon juice
- 1 garlic clove, minced
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
For the Lemon Vinaigrette
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey (omit for Whole30)
- 1 garlic clove, minced
- ½ teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Prepare the marinade and marinate steak: In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak thoroughly with this marinade and let it sit for at least 30 minutes, or up to 4 hours in the refrigerator to develop flavors.
- Make the tzatziki: Mix together the Greek yogurt, grated and squeezed cucumber, fresh lemon juice, minced garlic, chopped dill, salt, and pepper in a bowl. Chill in the fridge while preparing the rest of the dish to allow flavors to meld.
- Mix the lemon vinaigrette: In a small bowl, whisk olive oil, fresh lemon juice, honey (if using), minced garlic, dried oregano, salt, and pepper until emulsified. Set aside.
- Sear the steak: Heat a cast-iron skillet or grill pan over medium-high heat. Once hot, sear the marinated steak for 4 to 5 minutes on each side until cooked to desired doneness. Remove steak from the pan and let it rest for 5 minutes before slicing thinly against the grain.
- Assemble the bowls: In serving bowls, layer cooked grains or roasted chickpeas as the base. Add sliced steak on top, then arrange cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, crumbled feta, and chopped fresh herbs evenly over each bowl.
- Finish with tzatziki and vinaigrette: Drizzle the lemon vinaigrette over the assembled bowls and dollop with chilled tzatziki. Serve immediately for a fresh and wholesome Mediterranean meal.
Notes
- For dairy-free options, substitute Greek yogurt with coconut yogurt and omit feta cheese.
- The roasted chickpeas are optional and suitable for paleo or keto variations replacing grains.
- Marinate the steak longer (up to 4 hours) for deeper flavor.
- Use a cast-iron skillet or grill pan for the best sear on the steak.
- This recipe is ideal for meal prep as components can be stored separately in glass containers and combined when ready to eat.
- Omit honey in vinaigrette for Whole30 compliant version.
- Adjust grain choice to suit dietary preferences (quinoa for gluten-free, cauliflower rice for low-carb).
