Ingredients
Salad Ingredients
- 2 cups vanilla yogurt (Greek yogurt recommended)
- 1 cup whipped cream
- 2 cups pineapple tidbits, well-drained
- 2 cups mini marshmallows
- 1 cup pecans, chopped (or walnuts)
- 2 cups sweetened flaked coconut
Cranberry Sauce Ingredients
- 4 cups cranberries (fresh or frozen)
- 1 cup white sugar
- 1 cup orange juice
- Zest of 1 orange
- 2 cinnamon sticks
Instructions
- Make the sauce: In a medium saucepan, combine the cranberries, sugar, orange juice, orange zest, and cinnamon sticks. Place over medium heat and bring to a boil.
- Simmer: Once boiling, reduce the heat and let the mixture simmer gently for 10 minutes until the cranberries have softened and the sauce thickens slightly.
- Cool the sauce: Remove the saucepan from heat and allow the cranberry sauce to cool completely. The sauce will thicken further as it cools.
- Mix the salad ingredients: In a large bowl, combine the vanilla yogurt, whipped cream, pineapple tidbits, mini marshmallows, chopped pecans, and sweetened flaked coconut. Stir until evenly incorporated.
- Add the cranberry sauce: Pour 1 1/2 cups of the cooled cranberry sauce into the bowl with the salad mixture. Stir well to combine all ingredients thoroughly. Add more sauce if desired for additional tartness and moisture.
- Chill: Cover the bowl and refrigerate the salad for at least 4 hours or overnight. This chilling step allows flavors to meld and the salad to firm up.
- Serve: Before serving, garnish the salad with additional chopped nuts for a crunchy topping. Serve chilled.
Notes
- For best texture, use Greek yogurt for creaminess and tang.
- Well-draining the pineapple tidbits prevents excess liquid from watering down the salad.
- Frozen cranberries can be used if fresh are unavailable; no need to thaw before cooking.
- This salad tastes better after chilling overnight, making it ideal for preparing in advance.
- Walnuts can be substituted for pecans based on preference or availability.
- Adjust the amount of cranberry sauce added to suit your taste; more sauce will increase tartness.
