Delight in these Mini Banana Pancake Bites, a fun and easy breakfast or snack option! Soft banana medallions are dipped in a lightly spiced pancake batter and pan-fried to golden perfection. They’re perfect for dipping, sharing, or enjoying as a bite-sized treat that combines wholesome ingredients with a touch of maple sweetness.

  • Total Time: 25 minutes
  • Yield: 8 servings

Ingredients

For the Banana Pancake Bites

  • 4 bananas, sliced into 1/3 inch thick medallions
  • 1 cup oat or almond milk (regular milk also works)
  • 2 tbsp maple syrup
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup regular or gluten free all purpose flour
  • 2 tbsp butter, for frying (regular or vegan butter will work)

Instructions

  1. Prepare the Bananas: Slice the bananas into 1/3 inch thick rounds and set aside. This creates the base for your mini pancake bites.
  2. Make the Pancake Batter: In a bowl, whisk together the milk, maple syrup, baking powder, vanilla extract, and cinnamon until combined. Gradually stir in the flour until a smooth pancake batter forms, free of lumps.
  3. Heat the Skillet: Place a skillet over medium heat and add 1/2 tablespoon of butter. Allow the butter to melt and sizzle, then tilt the pan to evenly coat the surface.
  4. Coat and Cook the Banana Slices: Use a fork to dip each banana slice individually into the batter, coating both sides. Immediately place the coated banana medallion into the hot skillet, spacing them about an inch apart. Repeat until the skillet is filled without overcrowding.
  5. Fry until Golden: Cook the banana bites on one side until golden brown, then carefully flip them to cook the other side until also golden and cooked through.
  6. Remove and Drain: Transfer the cooked pancake bites to a plate lined with paper towels to absorb excess butter, if desired. Continue frying the remaining coated bananas until all are cooked.
  7. Serve: Enjoy these mini banana pancake bites immediately while warm, perfect on their own or with your favorite syrup or topping.

Notes

  • Use gluten-free all-purpose flour to make this recipe gluten-free.
  • You can substitute maple syrup with honey or agave nectar if preferred.
  • For a vegan version, use plant-based milk and vegan butter.
  • Ensure the skillet is properly heated and butter sizzling before frying to achieve crispy edges.
  • Serve with fresh fruit, yogurt, or a drizzle of additional maple syrup for extra flavor.
