Ingredients
Dough
- 2 1/2 cups all purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 8 tablespoons unsalted butter (cold, cut into pieces)
- 1 egg
- 1 cup buttermilk
- 1 cup mixed berries (any combination)
Vanilla Glaze
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven: Preheat your oven to 400°F to prepare for baking the scones.
- Combine dry ingredients: In a large bowl, mix together the flour, sugar, baking powder, and salt until evenly combined.
- Cut in butter: Using a pastry blender or fork, cut the cold unsalted butter into the flour mixture until it resembles coarse crumbs, ensuring a flaky texture.
- Mix wet ingredients: In a small bowl, whisk together the egg and 1/2 cup of buttermilk.
- Form dough: Gradually add the egg and buttermilk mixture to the flour and butter, stirring and adding extra buttermilk as needed until the dough just sticks together.
- Fold in berries: Gently fold the mixed berries into the dough, being careful not to break them too much to retain their shape.
- Prepare baking sheet: Line a baking sheet with parchment paper or a Silpat mat for easy removal.
- Shape dough: Shape the dough into two round circles about 1/2 to 3/4-inch high directly on the prepared baking sheet.
- Chill dough: Refrigerate the entire baking sheet for about 30 minutes until the dough is very cold to help the scones keep their shape while baking.
- Cut dough: Remove dough from refrigerator and cut each circle into 6 triangles. Position the scones at least 1-2 inches apart on the baking sheet.
- Bake scones: Bake in the preheated oven for 12-15 minutes or until the bottoms are lightly browned. Transfer scones to a cooling rack.
- Prepare vanilla glaze: In a small bowl, combine powdered sugar, milk, and vanilla extract until smooth.
- Glaze scones: Drizzle the vanilla glaze over the cooled scones as much as desired.
Notes
- Use cold butter and chill the dough to ensure flaky, tender scones.
- Any mixed berries such as blueberries, raspberries, or blackberries work well.
- Do not overmix the dough to keep scones light and crumbly.
- You can adjust milk quantity in the glaze for desired consistency.
- Serve scones fresh for best texture and flavor.
