Ingredients
Chocolate Mixture
- 1 cup salted butter (227g)
- 8 ounces dark chocolate (227g, chopped, 55-60%)
- ¾ cup Dutch-process cocoa powder (75g)
- ½ teaspoon espresso powder
- ⅛ teaspoon fine sea salt
Egg Mixtures
- 7 large eggs (room temperature, separated)
- 1⅓ cups granulated sugar (266g total, divided into ⅔ cups + ⅔ cups)
- 1 tablespoon vanilla bean paste or extract
Instructions
- Preheat and Prepare Pan: Preheat the oven to 375°F (190°C). Line the bottom of a springform pan with parchment paper and lightly grease the pan with a neutral oil to prevent sticking.
- Melt Butter and Chocolate: Combine the salted butter and chopped dark chocolate in a medium bowl. Microwave in 30-second intervals, stirring in between, until fully melted and smooth. Set aside.
- Add Cocoa and Flavorings: Sift the Dutch-process cocoa powder, espresso powder, and fine sea salt into the melted chocolate mixture. Stir well until combined and set aside.
- Separate Eggs: Separate the egg whites into the bowl of a stand mixer and keep the yolks in a separate large bowl, both at room temperature for optimal mixing.
- Mix Egg Yolks: To the bowl with egg yolks, add ⅔ cup of granulated sugar and vanilla bean paste. Beat until the mixture is pale, thick, and almost smooth when rubbed between fingers.
- Whip Egg Whites: With the stand mixer on medium speed, whip the egg whites until soft peaks form. Gradually add the remaining ⅔ cup granulated sugar while mixing on low speed, then increase speed and whip until stiff, glossy peaks develop.
- Combine Chocolate with Egg Yolks: Pour the cooled chocolate mixture into the egg yolk mixture. Stir gently with a rubber spatula until mostly combined but still with visible yellow streaks.
- Fold in Egg Whites: Carefully fold the stiff egg whites into the chocolate mixture using a rubber spatula. Incorporate fully but gently to maintain volume and airiness.
- First Bake: Pour about two-thirds of the batter (approximately 700g) into the prepared pan. Bake for 20–25 minutes, until the cake is puffed, matte on top, and jiggles slightly in the center. Remove and cool on a wire rack.
- Store Remaining Batter: Cover the remaining one-third of the batter and keep at room temperature if baking soon or refrigerate for longer storage.
- Cool Cake: Allow the baked cake to cool for about 3 hours to set the texture and temperature before adding the remaining batter.
- Second Bake: Preheat oven again to 375°F (190°C). Spread the reserved batter evenly over the cooled cake and bake for another 15–20 minutes until a thin crust forms and the center is no longer wet or shiny.
- Cool and Remove Pan: Remove the cake from the oven, transfer to a wire rack, and carefully release the sides of the springform pan. Let cool at least 10 minutes before slicing.
- Serve: Serve the molten chocolate cake warm or at room temperature alongside ice cream, whipped cream, and fresh raspberries for a perfect balance of rich and fresh flavors.
Notes
- Use high-quality dark chocolate with 55-60% cocoa for the best rich flavor and melt.
- Room temperature eggs whip better and create more volume in the batter.
- Folding the whipped egg whites gently is critical to maintain the light texture of the cake.
- Do not overbake the first stage; a slight jiggle in the center ensures the molten effect.
- The two-stage baking is essential to get the dual textures—a tender cake base and molten top layer.
- Vanilla bean paste adds more depth of flavor than extract but both work.
- Espresso powder intensifies the chocolate flavor without tasting like coffee.
- For best results, use a springform pan to easily remove the cake without damage.
