These Muffin Tin Potato Stacks are a simple yet elegant side dish featuring thinly sliced potatoes layered with melted butter, Parmesan cheese, and garlic seasoning, baked to golden perfection in a muffin tin. Crisp on the edges with tender centers, they make a perfect accompaniment for any meal.

  • Total Time: 1 hour 5 minutes
  • Yield: 12 servings

Ingredients

Potato Stack Ingredients

  • 2 ½ lb Potatoes (russet or Yukon Gold, very thinly sliced)
  • ⅓ Cup Butter (melted, or half butter + half olive oil)
  • ¾ Cup Parmesan Cheese (grated)
  • 1 ½ Teaspoon garlic powder
  • ¾ Teaspoons salt
  • ¾ Teaspoons Black Pepper (ground)
  • Fresh or dried thyme (optional for garnish)
  • Non-stick spray or oil (for muffin tin)

Instructions

  1. Preheat the oven and prepare muffin tin: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin thoroughly with non-stick spray or oil to prevent sticking.
  2. Toss potatoes with butter and seasoning: In a large bowl, combine the very thinly sliced potatoes with melted butter (or a mix of butter and olive oil), grated Parmesan cheese, garlic powder, salt, and black pepper. Toss well to coat every slice evenly with the mixture.
  3. Layer in muffin cups: Begin layering the potato slices into each greased muffin cup, stacking them up to the top of each cup. Be mindful that the potatoes will shrink slightly as they bake, so filling them to the top is ideal.
  4. Bake until tender: Place the muffin tin in the preheated oven and bake for 45–55 minutes. Bake until the edges of the potato stacks are golden brown and the centers are tender when pierced with a fork.
  5. Rest and serve: Remove the muffin tin from the oven and allow the potato stacks to rest for 5 minutes. Carefully remove each stack from the muffin cups. Garnish with additional Parmesan cheese, fresh or dried thyme, or a pinch of salt if desired. Serve warm and enjoy.

Notes

  • Use very thin potato slices to ensure even cooking and a tender interior.
  • Yukon Gold potatoes offer a creamier texture, while Russet potatoes give a fluffier result.
  • Adding herbs like thyme is optional but adds a lovely aromatic touch.
  • Allowing the potato stacks to rest before removing them helps maintain their shape.
  • For crispier edges, you can broil for 1-2 minutes at the end of baking but watch closely to prevent burning.
