This savory mushroom rice recipe boasts a deep, earthy flavor and is a simple, comforting side dish that you'll find yourself enjoying by the spoonful. Perfectly cooked with fresh mushrooms, aromatic herbs, and chicken broth, it makes an excellent accompaniment to a variety of meals.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms (baby bella recommended)
  • ½ cup diced onion
  • 2 teaspoons minced garlic (about 2 cloves)
  • 2 teaspoons fresh thyme or ½ teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 1 cup long grain white rice
  • 1 ½ cups chicken broth
  • Fresh parsley (optional, for garnish)

Instructions

  1. Sauté Mushrooms and Onions: In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and diced onions. Cook for about 5 minutes, until the onions soften and mushrooms release their moisture.
  2. Add Aromatics and Seasoning: Stir in the minced garlic, thyme, Worcestershire sauce, salt, and pepper. Continue cooking for 1-2 minutes to combine flavors.
  3. Toast the Rice: Add butter and the long grain white rice to the pot. Stir and cook for 1-2 minutes, allowing the rice to absorb some of the mushroom liquid and butter.
  4. Add Broth and Simmer: Pour in the chicken broth, stirring to scrape up any browned bits on the bottom of the pot. Bring the liquid to a boil.
  5. Cook Covered: Once boiling, reduce the heat to low and cover the pot with a lid. Let the rice cook undisturbed for 15 minutes.
  6. Rest and Fluff: Turn off the heat and let the rice sit covered for 5 minutes. Then fluff with a fork.
  7. Season and Serve: Taste and adjust seasonings if needed. Garnish with fresh parsley if desired and serve warm.

Notes

  • For vegetarian or vegan variations, substitute vegetable broth for chicken broth and omit the butter or replace it with a plant-based alternative.
  • Use fresh thyme for better flavor, but dried thyme works well too.
  • Make sure to not lift the lid during the 15-minute cooking time to ensure even cooking.
  • Long grain white rice is recommended for a fluffy texture; other rice varieties will need adjusted cooking times.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
