  • Total Time: 40 minutes
  • Yield: 12 squares

Ingredients

    • Graham Cracker Crust:
    • 2 cups graham cracker crumbs
    • 2/3 cup butter, melted
    • 1/4 cup white sugar

    • Blueberry Layer:
    • 2 1/2 cups blueberries (fresh or frozen)
    • 2 tablespoons lemon juice
    • 1 cup white sugar
    • 2 tablespoons cornstarch

    • Strawberry Layer:
    • 3 cups strawberries, diced
    • 1 tablespoon lemon juice
    • 1/2 cup light brown sugar
    • 2 1/2 tablespoons cornstarch

    • Cream Cheese Layer:
    • 16 oz cream cheese (2 blocks), at room temperature
    • 1/2 cup butter, at room temperature
    • 1 1/2 cups powdered sugar
    • 2 teaspoons vanilla extract
    • 12 oz Cool Whip (1 large tub)

  • Topping:
  • 1 cup whipped cream (for piping)
  • 1/2 cup mixed blueberries and strawberries, sliced

Instructions

  1. Make the Crust: In a 9x13-inch pan, mix graham cracker crumbs and sugar. Add melted butter and combine. Press mixture evenly into the bottom of the pan using the flat side of a measuring cup. Set aside.
  2. Make the Blueberry Layer: In a medium saucepan over medium-low heat, cook blueberries, lemon juice, and sugar for 20–30 minutes until softened and liquid is mostly absorbed. Make a slurry with cornstarch and a little lemon juice. Stir into the pan and cook 2–3 more minutes until thickened. Let cool to room temperature.
  3. Make the Strawberry Layer: In a separate saucepan, cook strawberries, lemon juice, and brown sugar as above. Thicken with cornstarch slurry. Cook and stir until thick. Let cool completely.
  4. Make the Cream Cheese Layer: In a large bowl, beat together cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until fully combined. Gently fold in the Cool Whip until light and fluffy.
  5. Assemble: Spread 1/3 of the cream cheese mixture over the crust. Top with the cooled strawberry layer. Add another 1/3 of the cream cheese mixture and spread evenly. Layer on the cooled blueberry mixture. Finish with the final 1/3 of cream cheese mixture, smoothing the top.
  6. Chill: Cover and refrigerate for at least 1 hour or overnight.
  7. Decorate: Before serving, decorate with piped whipped cream and fresh sliced berries. Cut into squares and enjoy!

Notes

  • Make sure berry layers are fully cooled before assembling to prevent melting the cream cheese mixture.
  • This dessert is best chilled for several hours or overnight for clean layers and best texture.
  • You can substitute Cool Whip with homemade whipped cream if preferred.
