Ingredients
- 2 cups Rice Krispies cereal
- 1½ cups quick-cooking oats
- ½ cup light brown sugar, packed
- ½ cup orange blossom honey (or any honey)
- ½ cup creamy peanut butter
- 1 teaspoon pure vanilla extract
- ¼ cup unsweetened coconut flakes
- ½ cup semi-sweet chocolate chips, chilled
Instructions
- Prepare Dish: Spray an 8”x8” baking dish with nonstick cooking spray and set aside.
- Combine Dry Ingredients: In a large mixing bowl, combine Rice Krispies and oats.
- Heat Wet Ingredients: In a medium saucepan over medium heat, stir together brown sugar and honey until the mixture just starts to boil. Remove from heat and stir in the peanut butter and vanilla extract until smooth.
- Mix Everything Together: Pour the wet mixture over the dry ingredients and stir with a wooden spoon until evenly coated.
- Add Mix-ins: Fold in the coconut flakes and chilled chocolate chips quickly so the chips don't melt.
- Set in Pan: Transfer the mixture into the prepared baking dish. Press evenly with a silicone spatula.
- Chill: Place in the refrigerator until bars are firm. Slice into desired sizes and serve.
- Store: Refrigerate any leftovers in an airtight container.
Notes
- Make sure the chocolate chips are chilled so they don’t melt when added to the warm mixture.
- Use natural or flavored peanut butter depending on preference.
- Can substitute maple syrup or agave for honey.
