This classic Old-Fashioned Chicken and Dumplings recipe delivers tender baked chicken simmered in flavorful chicken broth with soft, homemade flour dumplings. A comforting, hearty meal perfect for family dinners, the dumplings are rolled thin, cut into squares, and cooked directly in the broth, thickening it while absorbing its rich flavor.

  • Total Time: 1 hour 20 minutes
  • Yield: 6 servings

Ingredients

Chicken and Broth

  • 2-3 chicken breasts (about 3 cups of cooked chicken)
  • 2 Tablespoons oil (avocado or olive oil)
  • Salt and pepper, to taste
  • 2 quarts chicken broth

Dumplings

  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • 2 Tablespoons cold salted butter, cubed
  • 1 cup milk
  • Additional all-purpose flour for dusting and rolling

Instructions

  1. Preheat and prepare chicken: Preheat your oven to 350°F (175°C). Spray a baking sheet with nonstick cooking spray. Place the chicken breasts on the baking sheet, drizzle with oil, and season with salt and pepper.
  2. Bake chicken: Bake the chicken breasts for about 45 minutes until they reach an internal temperature of 165°F (74°C). Once done, shred the chicken using two forks.
  3. Warm chicken broth: Pour 2 quarts of chicken broth into a large pot and start warming it on the stovetop over medium heat as you prepare the dumplings.
  4. Prepare dumpling dough: In a medium bowl, combine 2 cups all-purpose flour and ½ teaspoon baking powder. Add the cold cubed butter and work it in with your fingers, fork, or pastry cutter until the mixture resembles tiny pebbles.
  5. Mix milk into dough: Pour in 1 cup of milk and mix until a cohesive dough forms.
  6. Roll out dough: Dust a clean counter generously with flour. Turn the dough onto the floured surface and dust the top with more flour. Using a rolling pin, roll the dough out to about ¼ inch thickness, adding flour as needed to prevent sticking.
  7. Cut dumplings: Using a knife or pizza cutter, cut the rolled dough into squares. Dust dumpling squares with more flour to prevent sticking, which will also help thicken the broth later.
  8. Add chicken and dumplings to broth: Bring the chicken broth to a boil, add shredded chicken, and stir. Begin adding dumplings one at a time to avoid sticking together, stirring frequently.
  9. Cook dumplings: Let dumplings cook for 15-20 minutes. The broth will thicken from the flour on the dumplings, and the dumplings will start to sink slightly as they absorb the broth.
  10. Test and serve: Remove one dumpling to test for doneness; it should have no doughy taste. Serve hot and enjoy your comforting chicken and dumplings.

Notes

  • You can substitute chicken thighs for breasts if preferred for more flavor and juiciness.
  • Ensure the butter is cold for the best crumbly texture in the dumplings.
  • Use more flour for dusting if dumplings stick to your rolling pin or surface.
  • Stir dumplings gently and frequently when adding to prevent clumping.
  • This recipe serves well for 6 people and can be doubled if needed.
