Ingredients
Vegetables
- 2 medium carrots, diced into small cubes
- 2 small zucchinis, diced into small cubes
- 1/2 large onion, diced into small cubes
- 6 celery ribs, diced into small cubes
- 2 cloves of garlic, minced
Canned & Packaged
- 28 oz canned diced tomatoes
- 15 oz canned Great Northern beans, drained
- 15 oz canned Kidney beans, drained
- 1/2 cup pasta
Liquids & Seasonings
- 32 oz vegetable broth
- 1 tbsp Italian seasoning
- 1 tbsp dry basil
- 1 tbsp olive oil
- 2 cups water (optional, for adjusting consistency)
Instructions
- Sauté the Vegetables: Preheat a pot over medium heat and add the olive oil. Add the diced zucchini, carrots, celery, and onion. Sauté the vegetables for about 10 minutes, stirring occasionally, until they begin to soften and release their aroma.
- Add Tomatoes and Herbs: Pour in the canned diced tomatoes with their juices. Sprinkle the Italian seasoning and dry basil over the vegetables and stir to combine, infusing the mixture with classic Italian flavors.
- Add Broth, Pasta, and Beans: Pour in the vegetable broth followed by the half cup of pasta and the drained kidney and Great Northern beans. Bring the soup to a gentle simmer, letting it cook for about 10 minutes so the pasta softens and the flavors meld.
- Incorporate Garlic and Simmer: Press or add the minced garlic into the pot and stir well. Let the soup simmer for an additional 10 minutes. Check the soup’s thickness and, if preferred, add up to 2 cups of water to achieve your desired consistency.
- Serve Warm: Once the soup is hot and the pasta is cooked through, ladle the minestrone into bowls and serve immediately to enjoy its comforting warmth and rich flavors.
Notes
- Use small pasta shapes like ditalini or elbow macaroni for an authentic experience.
- For a thicker soup, reduce the added water or use less broth.
- You can add spinach or kale near the end of cooking for more greens.
- Adjust seasoning with salt and pepper to taste as needed.
- Leftovers store well and taste even better the next day.
