Ingredients
Chicken
- 4 boneless skinless chicken breasts
- 2 tablespoons butter
- Salt and pepper to taste
- 2 teaspoons Italian seasoning
Rice
- 1 cup uncooked white rice
- 2 ¼ cups low sodium chicken broth
- Juice of 1 lemon
- 1 teaspoon Italian seasoning
Instructions
- Prepare and brown chicken: Melt the butter in a large skillet or pan with a lid over medium heat. Season the chicken breasts with salt, pepper, and 2 teaspoons of Italian seasoning. Brown the chicken for 1-2 minutes on each side without cooking through. Once browned, transfer the chicken to a separate plate.
- Cook rice with chicken: In the same pan (without cleaning), add the uncooked white rice, low sodium chicken broth, lemon juice, and 1 teaspoon Italian seasoning. Stir to combine, then place the browned chicken breasts on top. Cover the pan with a lid and simmer over medium-low heat for 20-25 minutes, until all the liquid is absorbed and the rice is tender.
- Finish and serve: Once cooked, garnish with fresh parsley or cilantro and serve with lemon wedges for squeezing over the chicken and rice. Serve immediately while warm for a bright, flavorful meal.
Notes
- Use low sodium chicken broth to control salt levels and enhance flavor.
- Do not cook the chicken fully in the browning step; it will finish cooking with the rice.
- Covering the pan tightly is essential to properly cook the rice via simmering.
- Fresh herbs like parsley or cilantro add a fresh, vibrant garnish but are optional.
- Adjust lemon juice quantity based on your taste preference for citrus brightness.
- If you want more color, sear the chicken longer before simmering, but avoid overcooking.
