Ingredients
Main Ingredients
- 3 tablespoons unsalted butter
- 1 medium shallot, minced
- 2 garlic cloves, minced
- 1 tablespoon fresh thyme leaves, finely chopped
- ½ teaspoon nutmeg
- 1 (15-ounce) can pumpkin puree
- 1 teaspoon fine sea salt
- Pepper, to taste
- 4 cups water
- 12 ounces gluten free short pasta, such as rigatoni or penne
- ½ cup half and half
- 2 cups shredded sharp cheddar cheese (about 5.3 ounces)
- 1 ½ cups shredded gouda cheese (about 4 ounces)
- Parmesan cheese, optional for serving
Instructions
- Sauté Aromatics: Set a large stockpot with tall sides over medium heat and add the butter. Once melted, add minced shallot, garlic, thyme, and nutmeg. Cook, stirring regularly, until the shallot is translucent and just starting to turn golden, about 3-4 minutes.
- Add Pumpkin and Seasonings: Stir in the pumpkin puree, sea salt, and pepper to taste. Cook for about 30 seconds to combine flavors before adding water and pasta.
- Bring to a Boil and Cook Pasta: Cover the pot and increase the heat to medium-high to bring the liquid to a boil. Once boiling, remove the lid and simmer. Boil the pasta uncovered for 8 minutes, stirring every 30 seconds to prevent sticking.
- Add Half and Half and Continue Cooking: Stir in the half and half and cook until the pasta is al dente, about 3-4 more minutes. Then reduce heat to low.
- Add Cheese and Finish Sauce: Slowly add the shredded cheddar and gouda cheeses while stirring continuously until fully melted and the sauce is creamy.
- Serve and Garnish: Serve the mac and cheese immediately as is or topped with a sprinkle of parmesan cheese.
- Reheat Leftovers: Reheat leftover mac and cheese in a pot over medium heat with a splash of half and half, broth, or milk, stirring regularly. Alternatively, microwave in 20-30 second bursts, stirring well between each.
