Ingredients
Fruits
- 1 pound strawberries, quartered
- 6 ounces raspberries
- 3 ounces blackberries
- 6 ounces blueberries
- 1/4 fresh pineapple, cut into bite-size pieces
- 2 kiwi, sliced
- 1/4 cantaloupe, cut into bite-size pieces
- 4 ounces green grapes, halved
- 1 medium banana, sliced and dipped in lemon juice
- 4-5 Mandarin oranges, divided
Dressing
- 1/4 cup fresh orange juice (from several Mandarin oranges)
- 2 tablespoons fresh lemon juice
- 2 tablespoons honey
- 4-10 mint leaves, roughly chopped
Instructions
- Prepare the fruit mix: In a large serving bowl, combine all the fruits except the banana. This mixture includes strawberries, raspberries, blackberries, blueberries, pineapple, kiwi, cantaloupe, green grapes, and most of the Mandarin oranges. Gently toss them together to distribute evenly.
- Make the dressing: In a mason jar, add the fresh orange juice, lemon juice, honey, and roughly chopped mint leaves. Seal the jar and shake vigorously; this shaking process helps to infuse the mint flavor beautifully into the dressing.
- Toss the salad with dressing: Just before serving, pour the freshly made honey-orange dressing over the mixed fruit bowl. Gently toss the fruit to coat all pieces evenly without mashing them.
- Garnish and serve: Finally, add the sliced banana on top as a garnish to prevent browning and add a creamy texture contrast. Serve immediately and enjoy the refreshing flavors.
Notes
- To prevent the banana slices from browning, dip them in lemon juice immediately after slicing.
- Shake the dressing well before pouring to ensure the honey is fully mixed.
- For best results, serve the salad shortly after adding the dressing to keep the fruit fresh and vibrant.
- You may substitute honey with maple syrup for a vegan option.
- This recipe is highly customizable – swap or add your favorite seasonal fruits.
