Cottage Fries are crispy, oven-baked potato slices seasoned with paprika, thyme, and black pepper. This simple and flavorful side dish is perfect for serving alongside your favorite mains or as a tasty snack with dipping sauces.

  • Total Time: 43-45 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 20 ounces (567 g) russet potatoes (about 4 medium potatoes)

Seasoning and Oil

  • 2 tablespoons oil (such as vegetable or canola oil)
  • 1 teaspoon paprika
  • 3/4 teaspoon kosher salt, or salt to taste
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven: Set your oven temperature to 425 °F (220 °C) to prepare it for baking the potatoes.
  2. Mix the seasoning: Combine the paprika, kosher salt, dried thyme, and black pepper in a small bowl and set aside.
  3. Prepare the potatoes: Thoroughly scrub the potatoes under running water to remove any dirt. Pat them dry completely. Slice the potatoes horizontally into 1/3 inch (8.5 mm) thick rounds. Use paper towels or a clean kitchen towel to pat both sides of the slices dry to ensure crispiness.
  4. Coat with oil: Arrange the potato slices on a sheet pan. Drizzle the oil over them and use your hands or tongs to toss and evenly coat each slice with oil.
  5. Season the potatoes: Spread the oiled potatoes out evenly on the pan. Sprinkle half of the seasoning mix over one side of the slices. Flip each slice over and sprinkle the remaining seasoning on the other side.
  6. Bake: Place the sheet pan in the preheated oven and bake for 15 minutes. Remove from the oven, flip each slice to ensure even cooking, and bake for another 13 to 15 minutes until the potatoes are golden brown on the outside and tender inside.
  7. Serve: Remove from the oven and serve immediately with your favorite dipping sauces for a delicious, crispy treat.

Notes

  • Use oil with a high smoke point such as vegetable, canola, or avocado oil to prevent smoking at high oven temperatures.
  • Patting the potato slices dry before oiling helps achieve crispier fries.
  • You can adjust the seasoning amounts to suit your taste preferences.
  • These cottage fries are best enjoyed fresh out of the oven for optimal crispiness.
