These oven-baked meatballs are juicy, flavorful, and cooked to perfection in a rich marinara sauce. Made with a blend of ground beef and veal, fresh herbs, and cheese, they’re an easy and satisfying dish ready in under an hour.

  • Total Time: 45 minutes
  • Yield: 40 meatballs

Ingredients

  • 2 cups bread crumbs made from stale bread
  • 3/4 cup milk
  • 1 pound ground beef
  • 1/2 pound ground veal
  • 1 small yellow onion, finely minced
  • 4 cloves garlic, minced
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons Italian seasoning
  • 3/4 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 cup grated fresh Parmigiano Reggiano
  • 24 ounces jar of marinara sauce
  • Fresh basil ribbons, for garnish
  • Grated Parmesan, for garnish

Instructions

  1. Preheat oven to 400˚F. Line two baking sheets with foil and grease them with cooking spray; set aside.
  2. Tear slices of stale bread into pieces and pulse in a food processor to make 2 cups of crumbs.
  3. In a large bowl, combine bread crumbs with milk and let rest for 5 minutes.
  4. Add ground beef, veal, minced onion, garlic, eggs, parsley, basil, Italian seasoning, salt, pepper, and cheese. Mix gently until well combined.
  5. Grease hands lightly with cooking spray and shape the mixture into 1.5-inch meatballs.
  6. Arrange meatballs on prepared baking sheets and bake for 10 minutes.
  7. Flip meatballs and bake for another 8 minutes or until internal temperature reaches 165˚F.
  8. While baking, warm marinara sauce in a deep skillet over medium heat.
  9. Add cooked meatballs to the sauce, stir to coat, and cook for 3 minutes on medium-low heat.
  10. Remove from heat, garnish with basil ribbons and grated Parmesan, and serve.

Notes

  • Use stale bread for better texture and flavor; avoid store-bought breadcrumbs if possible.
  • Do not overmix the meat mixture to keep meatballs tender.
  • You can substitute ground veal with ground pork if desired.
  • Make a double batch and freeze extras for future meals.
