  • Total Time: 50 minutes
  • Yield: 7 servings

Ingredients

Eggplant and Seasonings

  • 1 large eggplant
  • 1 tsp sea salt (to draw out moisture)
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp parsley (finely chopped, or dried)
  • 4 tbsp parmesan cheese (grated)
  • 3-4 tbsp olive oil (to drizzle)

Mediterranean Dip

  • 3 tbsp full fat Greek yogurt (plain)
  • 1/2 juice of lemon
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tbsp kalamata olives (chopped)
  • 1/4 tsp parsley (finely chopped, or dried)
  • 1/4 tsp oregano

Instructions

  1. Preheat oven: Preheat your oven to 425℉ (220℃) to prepare for roasting the eggplant slices.
  2. Slice eggplant: Slice the eggplant lengthwise into 1/2 inch thick slices. Thinner slices can become too mushy when roasted.
  3. Draw out moisture: Lay the eggplant slices on a parchment-lined baking sheet. Sprinkle both sides with sea salt and let them sit for 15-20 minutes to draw out excess moisture. After this time, pat the slices dry with a paper towel.
  4. Season eggplant: Sprinkle the slices with pepper, garlic powder, and parsley. Drizzle olive oil over both sides and sprinkle grated parmesan cheese. Flip the slices and repeat the seasoning and oil drizzle on the other side.
  5. Roast eggplant: Place the baking sheet in the oven and roast the eggplant slices for 25-30 minutes until tender and golden. For extra crispiness, broil the slices for an additional 2-3 minutes, watching carefully to avoid burning.
  6. Prepare dip: In a small bowl, combine Greek yogurt, lemon juice, minced garlic, olive oil, chopped kalamata olives, parsley, and oregano. Mix or whisk thoroughly until well combined and creamy.
  7. Serve: Serve the roasted eggplant slices warm or at room temperature alongside the Mediterranean dip for dipping or spreading.

Notes

  • Salting the eggplant and allowing it to rest extracts moisture and reduces bitterness.
  • Broiling at the end adds a crispy texture to the eggplant but is optional.
  • The dip can be prepared in advance and stored in the refrigerator for up to 2 days.
  • This dish pairs well with crusty bread or pita for a complete appetizer.
  • Use fresh herbs if possible for more vibrant flavor.
  • Adjust olive oil quantity for personal taste and dietary preferences.
