Ingredients
Vegetables
- 1 head green cabbage
Seasonings and Oils
- 2 tablespoons extra virgin olive oil
- 1 tablespoon garlic paste
- 2 teaspoons fennel seeds or caraway seeds
- 1 teaspoon kosher salt, or to taste
- ½ teaspoon ground black pepper, or to taste
Garnish
- Fresh parsley, coarsely chopped (optional)
Instructions
- Preheat Oven: Preheat your oven to 400˚F (204˚C) and line a sturdy baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Slice Cabbage: Using a sharp chef's knife, slice the head of green cabbage into 1-inch thick wedges or slices on a cutting board. Arrange the cabbage steaks in a single layer on the prepared baking sheet.
- Apply Seasoning: In a small bowl, mix half of the extra virgin olive oil with the garlic paste, fennel seeds, kosher salt, and ground black pepper. Using a silicone basting brush, generously brush this mixture onto one side of the cabbage steaks. Carefully flip each cabbage steak and repeat the seasoning application on the other side with the remaining oil and spices.
- Roast the Cabbage: Place the baking sheet in the preheated oven. Roast the cabbage for 25 minutes without moving the slices to let the edges in contact with the baking sheet turn a golden, crispy brown.
- Flip and Continue Roasting: Using a metal spatula, carefully flip each cabbage steak over. Roast for an additional 20 minutes, or until the cabbage steaks are tender throughout but maintain crispy edges.
- Serve: Remove the cabbage steaks from the oven, garnish with coarsely chopped fresh parsley if desired, and serve warm for the best texture and flavor.
Notes
- Do not move the cabbage slices during roasting except for the one flip midway; this helps develop crispy edges.
- Leftover cabbage steaks lose their crispiness and are best eaten the day they are made.
- Fennel seeds can be substituted with caraway seeds for a slightly different but complementary flavor profile.
- For grilling, use a perforated metal grilling basket to prevent the slices from falling through the grill grates and cook over medium heat until tender and slightly charred.
