This Overnight Pancake Casserole is a delicious and easy breakfast casserole that layers small pancakes with a rich custard mixture and bakes to a custardy, fluffy delight. Perfect for make-ahead mornings, it’s served warm with butter and maple syrup for a comforting start to your day.

  • Total Time: 1 hour 10 minutes
  • Yield: 12 servings

Ingredients

For the Casserole

  • 24 small pancakes (frozen or homemade)
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For Serving

  • Butter, for dotting
  • Maple syrup, for drizzling

Instructions

  1. Prepare the baking dish: Gather all ingredients. Spray a 9x13-inch baking dish with cooking spray to prevent sticking and prepare for layering.
  2. Arrange pancakes: Place the 24 small pancakes in the baking dish in 3 rows, slightly overlapping to create a continuous batter-absorbing base for the custard.
  3. Make the custard mixture: In a medium mixing bowl, whisk together the eggs, heavy cream, whole milk, sugar, vanilla extract, and salt until fully combined and smooth.
  4. Pour custard over pancakes: Slowly pour the egg and cream mixture evenly over the arranged pancakes, ensuring all pancakes are soaked well.
  5. Refrigerate overnight: Cover the dish tightly with aluminum foil and refrigerate overnight to allow the pancakes to absorb the custard mixture fully.
  6. Preheat oven: Remove the casserole from the fridge and preheat your oven to 350°F (175°C).
  7. Bake covered: Bake the casserole covered with foil for 25 minutes to start setting the custard without browning too quickly.
  8. Bake uncovered: Remove the foil and continue baking for another 25 minutes, or until the center is set and slightly puffed.
  9. Let rest and serve: Allow the casserole to stand for 5 minutes after baking. Dot with pats of butter and drizzle generously with maple syrup before serving.

Notes

  • You can use either frozen or homemade pancakes; just ensure frozen pancakes are thawed before assembling.
  • The casserole can be assembled the night before, making it perfect for busy mornings or brunch gatherings.
  • If you like, add fresh berries or nuts on top after baking for extra flavor and texture.
  • Use whole milk and heavy cream for best custard richness; lower-fat milks may affect texture.
