A refreshing and sweet Passion Fruit Tea Boba recipe that combines chewy boba pearls soaked in homemade honey syrup with brewed black or green tea, creamy half and half, and tangy passion fruit purée. Perfect for a delightful homemade bubble tea experience.

  • Total Time: 1 hour 40 minutes
  • Yield: 2 servings

Ingredients

Boba Pearls

  • ½ cup boba (pearls)
  • 2½ cups water (for cooking boba)
  • Additional water as needed to keep boba submerged

Syrup

  • ½ cup water
  • 2 tbsp white granulated sugar
  • 2 tbsp brown sugar
  • 2 tbsp honey

Tea

  • 3 bags black or green tea
  • 1¼ cups hot water (180-200°F)

Other Ingredients

  • ½ cup passion fruit purée
  • ½ cup half and half
  • Ice cubes

Instructions

  1. Cook the Boba: Pour 2½ cups water into a small pot. Cover and bring to a boil, then add the boba pearls and stir for 1 minute. Reduce heat to a rolling simmer, cover the pot with a lid, and cook for 30 minutes, stirring every 5 minutes. Ensure the boba stays fully submerged by adding water if necessary.
  2. Rest the Boba: Remove the pot from heat and let the boba sit, covered, for an additional 30 minutes without lifting the lid.
  3. Drain and Rinse: Drain the boba and rinse briefly with cold water to stop cooking and remove excess starch.
  4. Make the Syrup: While cooking boba, add ½ cup water to a small pot. Add white sugar, brown sugar, and honey. Heat over medium heat for 5-7 minutes, whisking continuously until the sugars dissolve completely. Remove from heat and let cool.
  5. Sweeten the Boba: Add the drained boba to the cooled syrup and let soak for 30 minutes to absorb the sweetness.
  6. Brew the Tea: Steep the tea bags in 1¼ cups hot water (180-200°F) for 3-5 minutes, depending on desired strength. Remove tea bags and let the tea cool completely, either at room temperature or in the refrigerator.
  7. Prepare Passion Fruit Purée: If using frozen passion fruit purée, microwave in a cup in 20-second intervals until liquid, then let cool to room temperature.
  8. Assemble the Drink: Divide the sweetened boba, brewed tea, and half and half evenly between two tall glasses. Slowly stir in the passion fruit purée. Sweeten further with syrup to taste if desired and top each glass with ice cubes. For one serving, use about ¼ cup boba with some syrup, ½ cup tea, ¼ cup half and half, ¼ cup passion fruit purée, and 5-6 tablespoons of honey boba syrup.

Notes

  • The boba pearls take about 1 hour total to cook and rest properly, so plan accordingly.
  • Use black tea for a classic flavor, or green tea for a lighter taste.
  • Adjust sweetness by adding more or less syrup as preferred.
  • If passion fruit purée is not available, substitute with fresh passion fruit juice or concentrate.
  • Stir gently when combining ingredients to maintain the integrity of the boba pearls.
