Ingredients
Peach Filling
- 2 (29 ounce) cans sliced peaches, drained
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
Biscuit Topping
- 2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon table salt (or 1 teaspoon Kosher salt)
- 8 tablespoons cold butter, cubed
- 1 cup half and half
- 2 teaspoons vanilla extract
Instructions
- Heat Oven & Grease Pan: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray to prevent sticking.
- Make Peach Filling: Drain the canned peaches thoroughly. In a large mixing bowl, combine the peaches with granulated sugar, brown sugar, and 1 teaspoon vanilla extract. Pour the mixture into the prepared baking dish. Optionally, reserve some peach slices to place on top for a visually appealing finish.
- Mix Dry Ingredients: In another bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly combine the dry components.
- Cut in Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, press the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces. Be careful not to overwork this mixture to maintain a light texture.
- Add Wet Ingredients: Stir in the half and half along with 2 teaspoons of vanilla extract just until the dough comes together and is well combined. Avoid overmixing.
- Scoop Topping: Use a spoon to drop dollops of the biscuit batter evenly over the peach filling. If you reserved peach slices, place them between the dollops on top.
- Bake & Rest: Bake the cobbler uncovered for 40 minutes or until the topping is a deep golden brown. Then, cover loosely with foil and bake for an additional 5–10 minutes to ensure the biscuit topping is cooked through and the peach filling bubbles around the edges. Let the cobbler rest for 5 minutes before serving to set.

Notes
- Make sure to drain the peaches well to prevent the topping from becoming soggy.
- Cold butter is key for a flaky biscuit topping, so keep it chilled until you cut it into the dry ingredients.
- You can substitute half and half with whole milk or heavy cream for a richer topping.
- Serve with vanilla ice cream or whipped cream for an extra indulgent dessert.
- Leftovers can be covered and refrigerated for up to 3 days; reheat gently before serving.
