4.1 from 3 reviews

This classic New York Strip Steak recipe features perfectly seared and oven-finished steaks that lock in bold flavors and juiciness. Using a combination of stovetop searing and oven roasting, the steaks develop a beautiful crust while staying tender inside. Resting butter enhances the rich taste, resulting in a restaurant-quality steak experience at home.

  • Total Time: 50 minutes
  • Yield: 2 servings

Ingredients

Steak

  • 2 (8-10 ounce) New York strip steaks (at least 1-inch thick)

Seasonings

  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper

Finishing

  • 2 tablespoons resting butter (preferably herb or plain salted butter)

Instructions

  1. Bring to Room Temperature: Remove the steaks from the refrigerator and packaging, then place them on a plate to rest at room temperature for at least 30 minutes and up to 2 hours. This ensures even cooking throughout the meat.
  2. Preheat Oven and Skillet: Set your oven to 375℉ (190℃). Meanwhile, heat a large heavy skillet over high heat until it is smoking hot. Turn on your vent hood to handle any smoke.
  3. Season the Steaks: Rub each side of the steaks with olive oil to coat evenly. In a small bowl, mix salt, black pepper, and white pepper, then rub this seasoning blend onto both sides of each steak thoroughly.
  4. Sear the Steaks: Place steaks in the hot skillet and sear for 2-3 minutes per side without moving them to develop a golden-brown crust. Using tongs, hold the steak upright and sear the fat edge for 2-3 minutes to render and crisp the fat.
  5. Oven Finish: Transfer the skillet with the steaks into the preheated oven to finish cooking. Remove the steaks when they reach 5 degrees below your desired doneness (about 130℉ for medium rare) as the temperature will rise while resting.
  6. Rest and Serve: Immediately top each steak with a tablespoon of butter and let them rest for 10 minutes. Resting allows juices to redistribute and the temperature to rise slightly, enhancing tenderness and flavor.

Notes

  • Letting steaks come to room temperature ensures even cooking and tenderness.
  • Use a heavy skillet like cast iron for best searing results.
  • Monitor steak temperature carefully with a meat thermometer to achieve preferred doneness.
  • Allow steaks to rest after cooking to keep them juicy.
  • Resting butter can be flavored with herbs or garlic for additional taste.
