Ingredients
Bread
- 8 slices ciabatta or Italian bread
Spreads and Cheeses
- 4 tablespoons unsalted butter, softened
- 1/2 cup basil pesto
- 8 slices fresh mozzarella
- 4 slices gouda cheese
- 1/4 cup grated Parmesan
Other
- 2 medium tomatoes, thinly sliced
- Salt and pepper to taste
Instructions
- Prepare the bread: Place the bread slices on a cutting board and evenly spread softened unsalted butter on one side of each slice. Place the buttered sides face down on the cutting board.
- Assemble the sandwiches: Spread 1 to 2 tablespoons of basil pesto on the unbuttered side of half the bread slices. Layer mozzarella slices, gouda cheese, and sprinkle grated Parmesan over the pesto. Add thinly sliced tomatoes on top and season them lightly with salt and pepper.
- Cook the grilled cheese: Working in batches, place a prepared bread slice (pesto and cheese side up) topped with another slice of bread butter-side out into a large nonstick skillet over medium heat. Cook for 3 to 4 minutes on each side, or until the bread is golden brown and the cheeses are melted.
- Serve: Serve the grilled cheese sandwiches immediately while warm for the best flavor and texture.
Notes
- Using ciabatta or Italian bread adds a sturdy yet airy texture that holds the fillings well.
- Softened butter spreads easier and ensures even grilling for a crispy crust.
- Adjust seasoning on tomatoes with salt and pepper according to taste for balance.
- To melt cheese thoroughly, keep the heat medium to avoid burning the bread.
- This sandwich is best enjoyed fresh and hot but can be reheated gently on a skillet if needed.
