Ingredients
Pickling Brine
- 1.25 cups White vinegar
- 1.25 cups Water
- 2 teaspoons Kosher salt
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Whole black peppercorns
- 1/2 teaspoon Dill seed
Pickled Beans
- 16 ounces Fresh green beans
- 2 sprigs Fresh Dill
- 2 cloves Garlic (sliced)
Instructions
- Prepare Green Beans: Wash the green beans thoroughly and pat them dry with a clean towel. Trimming the ends is optional but not necessary for this recipe.
- Add Dill to Jars: Evenly divide fresh dill sprigs between two wide-mouth pint mason jars to infuse herbaceous flavor.
- Pack Beans into Jars: Tightly pack the fresh green beans upright into the jars over the dill sprigs, ensuring they fit snugly for proper pickling.
- Make the Brine: In a small pot, combine white vinegar, water, kosher salt, sliced garlic, mustard seeds, black peppercorns, and dill seed. Bring this mixture to a rolling boil over medium-high heat, allowing the flavors to meld.
- Pour Brine Over Beans: Remove the pot from heat and let the brine cool for 2-3 minutes to avoid cooking the beans. Then carefully pour the hot brine over the green beans in each jar, covering them completely.
- Cool and Refrigerate: Allow the jars to cool completely to room temperature with lids off or loosely on. Once cool, seal the jars tightly and refrigerate. Let the beans pickle and develop flavor for 48-72 hours before enjoying.
Notes
- For crisper beans, blanch briefly before packing if desired, though it's not required.
- Use fresh, firm green beans for best texture and flavor.
- Store pickled beans in the refrigerator and consume within 2-3 weeks for optimal freshness.
- You can customize the spice mix by adding red pepper flakes for heat or additional herbs like thyme.
