These Pimento Cheese Burgers are a flavorful twist on classic burgers, featuring a creamy, tangy pimento cheese spread made with sharp cheddar, cream cheese, and a hint of spice from Old Bay seasoning and Tabasco. Juicy beef patties are grilled or pan-fried to perfection and topped with melting pimento cheese, then served on toasted buns with fresh lettuce, tomato, and red onion for a truly satisfying meal.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Pimento Cheese Spread

  • 2 cups shredded sharp cheddar cheese
  • 6 ounces cream cheese
  • 3 tablespoons mayonnaise
  • 4 ounce jar pimento peppers, drained and chopped
  • 1/2 teaspoon Old Bay seasoning
  • 1/2 teaspoon Tabasco sauce
  • Salt, to taste

Burgers

  • 1 1/2 lbs ground beef
  • 1 1/2 teaspoons Old Bay seasoning
  • 1 teaspoon salt
  • Fresh black pepper, to taste
  • Pat of butter (optional, for skillet cooking)

To Serve

  • Butter sandwich buns
  • Sliced tomato
  • Leaf lettuce
  • Sliced red onion

Instructions

  1. Prepare the Pimento Cheese: In a stand mixer or large mixing bowl, combine shredded sharp cheddar cheese, cream cheese, mayonnaise, chopped pimentos, Old Bay seasoning, and Tabasco sauce. Blend on medium speed until the mixture is smooth and creamy. Season with salt to taste and set aside.
  2. Form the Burger Patties: In another bowl, gently mix the ground beef with Old Bay seasoning, salt, and fresh black pepper. Divide the mixture into four equal portions and form each into a patty. Press your finger into the center of each patty to create a shallow indent; this helps prevent the burgers from bulging in the middle while cooking.
  3. Cook the Burgers: Heat a grill or cast iron skillet over medium-high heat. If using a skillet, add a pat of butter and allow it to melt. Cook the burgers for 4-5 minutes on each side, flipping only once, until they reach an internal temperature of 160°F for medium doneness. During the last two minutes of cooking, top each burger with a generous scoop of the prepared pimento cheese and cover to let the cheese melt thoroughly.
  4. Toast the Buns: While the burgers cook, butter the sandwich buns and place them on the grill or skillet alongside the burgers. Toast for about a minute until golden and slightly crisp.
  5. Assemble and Serve: Place each burger on a toasted bun and add sliced tomato, leaf lettuce, and sliced red onion. Optionally, add more pimento cheese on top for extra flavor. Serve immediately while warm and enjoy.

Notes

  • Ensure you do not overmix the ground beef to keep your burgers tender.
  • The indent in the center of the patties prevents them from puffing up and helps them cook evenly.
  • You can adjust the amount of Tabasco and Old Bay seasoning to control the spice level of the pimento cheese.
  • For best results, use a cast iron skillet or grill to get a nice sear on the burgers.
  • Make sure the internal temperature of the burgers reaches 160°F to ensure food safety.
  • Feel free to customize toppings or add pickles and mustard to suit your taste.
