Creamy and protein-packed pistachio overnight oats that are easy to prepare and perfect for a quick, delicious breakfast. These oats have a delightful pistachio flavor reminiscent of pistachio ice cream and are great for meal prepping.

  • Total Time: 4 hours 10 minutes
  • Yield: 1 serving

Ingredients

Overnight Oats Mix

  • ½ cup rolled oats
  • 1 scoop vanilla protein powder
  • ¾ cup unsweetened almond milk or pistachio milk
  • ½ teaspoon vanilla extract
  • 1 teaspoon chia seeds
  • ½ tablespoon maple syrup
  • 1 tablespoon pistachio butter
  • 1 tablespoon chopped, roasted, and salted pistachios, plus more for topping
  • Pinch of salt

Instructions

  1. Combine Ingredients: Add all the ingredients including oats, protein powder, almond or pistachio milk, vanilla extract, chia seeds, maple syrup, pistachio butter, chopped pistachios, and a pinch of salt into a mason jar or container. Stir thoroughly to combine everything evenly.
  2. Refrigerate to Soften: Place the sealed jar or container in the refrigerator and let it soak for at least 4 hours, preferably overnight. This allows the oats, protein powder, and chia seeds to absorb the liquid and become creamy.
  3. Stir and Adjust: In the morning, take the oats out of the fridge and give them a good stir. The mixture should be creamy and thick. If needed, add a small splash of milk to loosen the consistency before serving.
  4. Add Toppings and Serve: Garnish the overnight oats with additional chopped pistachios and a drizzle of pistachio butter or any other favorite toppings. Enjoy immediately for a nutritious and tasty breakfast.

Notes

  • Use pistachio milk for an extra pistachio flavor or almond milk as a neutral base.
  • Adjust the sweetness by adding more or less maple syrup according to taste.
  • Soaking time can be increased to overnight for best texture.
  • Protein powder adds creaminess and a protein boost but can be omitted or replaced with your preferred type.
  • Ensure the container is sealed tightly to prevent spills and to maintain freshness.
