- 6 cups Rice Chex cereal

- 1 box (3.4 ounces) pistachio pudding mix
- ⅓ cup salted butter
- ½ cup white chocolate chips

Instructions
- Prepare cereal and pistachios: In a large mixing bowl, combine the Rice Chex cereal and coarsely chopped pistachios. Set aside to use later.
- Create powdered sugar mixture: In a separate plastic bag or silicone bag, combine the powdered sugar and pistachio pudding mix. Seal and set this aside for coating.
- Melt butter and white chocolate: In a small saucepan over low to medium heat, melt the salted butter. Lower the heat and whisk in the white chocolate chips quickly, stirring continuously until the mixture is smooth and fully melted.
- Coat the cereal mixture: Gradually pour the melted white chocolate and butter mixture over the Rice Chex and pistachios, folding gently as you add the mixture to avoid crushing the cereal. Continue until the mixture is evenly coated.
- Coat with powdered sugar blend: Transfer the coated cereal mixture to the bag containing the powdered sugar and pistachio pudding powder. Seal the bag and shake gently until each piece is fully coated with the powder.
- Cool and set: Spread the coated mixture onto parchment paper or a baking sheet. Stir in any remaining chopped pistachios and allow the mixture to cool and harden before serving.
Notes
- Be gentle when folding the melted chocolate mixture into the cereal to prevent breaking the cereal pieces.
- Let the puppy chow cool completely so the coating sets firmly for the best texture.
- You can adjust the amount of powdered sugar to your preferred sweetness level.
- Store leftovers in an airtight container at room temperature for up to one week.
