Ingredients
Main Ingredients
- 1 cup plain Greek yogurt
- 1 cup milk (any type)
- 1 tablespoon honey
- 1 teaspoon vanilla bean paste
- 1/4 teaspoon cinnamon
- Pinch of salt
- 1/4 cup chia seeds
Optional Toppings
- Granola
- Fresh fruit
- Nuts
- Nut butter
- Chocolate chips
- Cinnamon
Instructions
- Make chia seed pudding: In a large open-mouth jar or mixing bowl, add the plain Greek yogurt, milk, honey, vanilla bean paste, cinnamon, and a pinch of salt. Whisk the ingredients together until smooth and well combined. Then, stir in the chia seeds thoroughly to ensure they are evenly distributed throughout the mixture.
- Let chill: Cover the jar or bowl and refrigerate overnight for at least 8 hours. After about 20 to 30 minutes of refrigeration, stir the mixture once to prevent any clumps and keep the chia seeds evenly spread out.
- Enjoy: Once set, give the pudding a gentle stir. If the consistency is too thick, add a splash of milk to thin it out to your desired texture. Serve the pudding plain or topped with your favorite toppings such as granola, fresh fruit, nuts, nut butter, chocolate chips, or a sprinkle of cinnamon for added flavor and texture.
Notes
- Use any type of milk you prefer, such as almond, soy, or cow's milk.
- For a vegan or dairy-free version, substitute Greek yogurt with coconut yogurt and use plant-based milk.
- Adjust the sweetness by adding more or less honey according to taste.
- Stirring the pudding after 20-30 minutes helps prevent clumping and improves texture.
- Chia seeds will absorb the liquids and expand, creating a gel-like consistency that is rich in fiber and protein.
- Store leftovers in the refrigerator and consume within 3 days for best freshness.
