This rich and creamy Pumpkin Cheesecake features a spiced Biscoff cookie crust and a perfectly smooth pumpkin filling, topped with caramel sauce, whipped cream, and toasted nuts. It’s the ultimate fall dessert that’s perfect for Thanksgiving or any holiday celebration.

  • Total Time: 7 hours 40 minutes
  • Yield: 8 slices

Ingredients

  • Biscoff Cookie Crust:
  • 1¾ cups Biscoff cookie crumbs (about 1 package)
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
  • Pumpkin Cheesecake:
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • 4 large eggs
  • 15 oz can pumpkin puree
  • ½ cup heavy whipping cream
  • Toppings:
  • Fresh whipped cream
  • Caramel sauce
  • Pecans or walnuts, toasted (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, mix Biscoff cookie crumbs, melted butter, and brown sugar until it resembles wet sand.
  3. Press the crust mixture firmly into the bottom and slightly up the sides of the pan. Bake for 10 minutes, then set aside to cool.
  4. In a large mixing bowl, beat cream cheese, granulated sugar, and brown sugar until smooth and creamy.
  5. Add vanilla, cinnamon, nutmeg, ginger, and cloves. Mix until combined.
  6. Beat in eggs two at a time on low speed, mixing just until incorporated—avoid over-mixing.
  7. Add pumpkin puree and heavy cream, mixing on low until smooth.
  8. Pour filling over the prepared crust and smooth the top.
  9. Wrap the outside of the springform pan in a double layer of foil. Place it in a roasting pan and fill with hot water halfway up the sides to create a water bath.
  10. Bake for 1 hour 15 to 1 hour 25 minutes, until edges are set and center is slightly jiggly.
  11. Remove from oven, discard water bath, and cool cheesecake at room temperature for 1 hour.
  12. Refrigerate for at least 6 hours or overnight.
  13. Top with caramel sauce, whipped cream, and toasted nuts before serving. Slice and enjoy!

Notes

  • For clean slices, use a hot knife and wipe between each cut.
  • Use room-temperature ingredients to ensure a smooth filling.
  • Cheesecake can be made a day ahead and topped just before serving.
  • If you don’t have Biscoff cookies, graham crackers work as a substitute.
