In just 15 minutes, you can enjoy a vibrant and aromatic soup featuring vermicelli noodles and fresh basil, cilantro, and chives, perfect for a light lunch or dinner.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Soup Base

  • 1 teaspoon olive oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 heaping tablespoons Thai green curry paste
  • 1 (13.5 ounce) can full fat coconut milk

Noodles and Herbs

  • 3.5 ounces uncooked vermicelli noodles
  • Handful of basil, torn
  • Handful of cilantro, torn or chopped
  • 1 tablespoon chopped chives (or scallions)

Seasoning and Garnish

  • Salt and pepper, to taste
  • Lime wedges, for serving

Instructions

  1. Heat olive oil: Add 1 teaspoon olive oil to a soup pot over medium-high heat to prepare the base for the soup.
  2. Sauté aromatics: Add the grated fresh ginger and minced garlic to the hot oil. Cook for about 30 seconds until fragrant, releasing their flavors.
  3. Add broth and curry paste: Pour in 4 cups of vegetable broth and stir in 2 heaping tablespoons of Thai green curry paste. Stir until the curry paste dissolves completely. Increase the heat and bring the mixture to a boil.
  4. Simmer with coconut milk: Reduce heat to medium-low and stir in 1 can (13.5 ounce) of full fat coconut milk. Let the soup simmer gently for 2 minutes to blend the flavors.
  5. Cook noodles and add herbs: Add 3.5 ounces of uncooked vermicelli noodles along with the torn basil, cilantro, chopped chives, and salt & pepper to taste. Cook for 2 to 3 minutes until the noodles soften and herbs infuse.
  6. Serve with lime: Ladle the soup into bowls and serve with fresh lime wedges to squeeze over the top for a bright finishing touch.

Notes

  • Use full fat coconut milk for a richer, creamier soup; light coconut milk can be used but may reduce richness.
  • Vermicelli noodles cook very quickly; avoid overcooking to prevent them from becoming mushy.
  • If you prefer a spicier soup, add extra green curry paste or a pinch of chili flakes.
  • This soup can be customized with vegetables or tofu for added substance.
  • Fresh herbs like basil and cilantro are essential for an authentic Thai flavor, don’t skip them.
  • Leftover soup can be stored in the refrigerator for up to 2 days but noodles may absorb liquid and thicken the soup.
