4.2 from 1 review

This classic Raspberry Jam Recipe is a simple, homemade preserve that captures the fresh, sweet-tart flavor of raspberries. Using just raspberries, sugar, and lemon juice, this easy stovetop jam is cooked to perfection and cooled for a set, making it perfect for spreading on toast, dolloping on yogurt, or gifting to friends and family.

  • Total Time: 12 hours 25 minutes
  • Yield: 32 servings (about 2 jars of 16 ounces each)

Ingredients

Jam Ingredients

  • 30 ounces raspberries (fresh or frozen)
  • 3 ½ cups white sugar
  • 5 tablespoons lemon juice (about ⅓ cup minus 1 teaspoon, or 2.5 fluid ounces)

Instructions

  1. Get prepped: Prepare your workspace by setting out all ingredients and ensuring you have 2 clean 16-ounce jars ready with lids for storing the finished jam.
  2. Measure ingredients: Accurately measure 30 ounces of raspberries, 3 ½ cups of white sugar, and 5 tablespoons of lemon juice to have them ready.
  3. Cook the jam: Place the raspberries, sugar, and lemon juice into a large pot over medium heat. Stir often as the raspberries soften and the sugar dissolves. Mash the berries gently to help them break down.
  4. Boil the jam: Increase the heat to medium-high and bring the mixture to a boil. Continue to cook and stir often for 7-9 minutes until the jam reaches 220°F (104°C).
  5. Finish cooking: Maintain the boil for an additional 3 minutes, stirring constantly to prevent scorching on the pot bottom.
  6. Jar and cool: Carefully ladle the hot jam into the clean jars, cover with lids, and let them cool at room temperature. Once cooled, refrigerate the jars.
  7. Set the jam: Allow the jam to rest for 12-24 hours in the refrigerator to fully set before consuming.

Notes

  • Use fresh or frozen raspberries according to availability; frozen raspberries may require slightly longer cooking time.
  • Ensure jars are sterilized and dry to avoid spoilage.
  • Do not skip stirring frequently to prevent the jam from burning.
  • The jam should reach 220°F (104°C) to properly set; using a candy thermometer is recommended.
  • Jam can be stored in the refrigerator for up to 3 weeks or frozen for longer storage.
