A refreshing and visually stunning Raspberry Matcha Latte that combines fruity raspberry syrup and fresh raspberries with creamy white chocolate and matcha cold foam for a deliciously unique iced beverage perfect for a quick treat or afternoon pick-me-up.

  • Total Time: 5 minutes
  • Yield: 1 serving

Ingredients

Raspberry Latte Base

  • 1-2 Tbsp Torani raspberry syrup
  • 2 Tbsp fresh raspberries (optional)
  • 2 Tbsp white chocolate powder
  • 2 Tbsp boiling water
  • 3/4 cup whole milk
  • Ice, enough to fill 3/4 of the glass

Matcha Cold Foam

  • 2 tsp matcha powder
  • 2 Tbsp whole milk
  • 2 Tbsp heavy whipping cream

Instructions

  1. Prepare the Raspberry Base: In a tall glass cup, add 1-2 tablespoons of Torani raspberry syrup and 2 tablespoons of fresh raspberries (optional). If using raspberries, use a muddler to gently mash them to release their juices for added flavor and aesthetics.
  2. Add Ice: Fill the glass about three-quarters full with ice to chill the drink and create the perfect base for layering.
  3. Dissolve White Chocolate Powder: In a small bowl or cup, mix 2 tablespoons of white chocolate powder with 2 tablespoons of boiling water until fully dissolved, ensuring a smooth sweet chocolate base.
  4. Add Milk to White Chocolate Mixture: Pour 3/4 cup of cold whole milk into the white chocolate mixture and stir gently to combine the flavors.
  5. Combine Milk with Ice and Syrup: Pour the combined white chocolate milk mixture over the ice and raspberry syrup in the glass, gently mixing the layers together.
  6. Make the Matcha Cold Foam: In a mason jar, add 2 teaspoons matcha powder, 2 tablespoons whole milk, and 2 tablespoons heavy whipping cream. Using a matcha whisk, vigorously whisk for about 20 seconds until thick and foamy. To avoid clumps, sift your matcha powder through a fine mesh sieve before whisking.
  7. Top Latte with Matcha Foam: Pour the prepared matcha cold foam gently over the latte. Optionally, mix slightly before enjoying your perfectly layered Raspberry Matcha Latte.

Notes

  • Fresh raspberries are optional and mainly for presentation; the raspberry syrup provides most of the flavor.
  • Using ripe, sweet raspberries is recommended to avoid sourness that can affect the drink's taste.
  • Sift matcha powder before whisking to prevent clumping and ensure a smooth foam.
  • This recipe serves one but can be doubled or tripled as needed.
