Ingredients
Base Ingredients
- 1 cup red lentils (split, soaked 2 hours or overnight, drained)
- Salt (to taste)
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
Binding Ingredients
- 2 tbsp ground flax
- 3 tbsp psyllium husk
- 1/3 cup water (plus 1–2 tbsp more if needed)
- 1/2 tsp baking soda
- 1 tsp baking powder
Topping
- Seeds (for topping, such as sesame, sunflower, or poppy seeds)
Instructions
- Blend the lentil base: Blend the drained soaked red lentils with salt, olive oil, and apple cider vinegar until the mixture is mostly smooth, creating the base of the dough.
- Add binding agents: Add ground flax and psyllium husk to the blended lentil mixture and blend again until the batter becomes thickened and glossy, helping the dough to hold together.
- Rest the mixture: Let the batter rest for 2–3 minutes to allow the psyllium husk and flaxseed to absorb liquid and further thicken the mixture.
- Incorporate leavening agents: Stir in the baking soda and baking powder by hand to introduce leavening, which will help the rolls rise during baking.
- Shape the rolls: Using a small cookie scoop, portion the dough onto a parchment-lined baking sheet to form individual bread rolls.
- Add toppings and bake: Sprinkle seeds evenly on top of each roll, then bake in a preheated oven at 350°F (175°C) for 19 to 25 minutes, or until the rolls turn golden brown.
- Cool before serving: Allow the bread rolls to cool for 5 minutes on the baking pan, then transfer them to a wire rack to cool completely or serve warm.
Notes
- Soaking the lentils overnight or for at least 2 hours is key to ensure a smooth batter and better texture.
- You can adjust the amount of water slightly if the batter is too thick to blend smoothly.
- Choosing a mixture of seeds like sesame, sunflower, or poppy adds flavor and crunch to the rolls.
- These rolls freeze well; cool completely before freezing in an airtight container.
- Make sure to use psyllium husk powder for best results in binding and texture.
