These Roasted Garlic Cauliflower Mashed Potatoes are a healthier, flavor-packed alternative to traditional mashed potatoes. Made with roasted cauliflower, Yukon gold potatoes, and a creamy blend of yogurt and milk, this dish is gluten-free, paleo-friendly, and can be made vegan with simple swaps.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

  • 1/2 large head cauliflower (about 4 cups medium-large florets)
  • 3 cloves garlic
  • 1/2 tablespoon olive oil
  • 2 lbs Yukon gold potatoes, peeled and cubed
  • 2 tablespoons thick yogurt (Greek-style, Skyr, or dairy-free)
  • 2 tablespoons butter, divided (vegan butter works too)
  • 4–5 tablespoons unsweetened cashew milk or milk of choice
  • 1/2 teaspoon salt, to taste
  • 1 tablespoon freshly chopped chives

Instructions

  1. Boil the Potatoes: Bring a large pot of water to a boil. Peel and chop potatoes into medium cubes. Once boiling, add potatoes and simmer on low-medium heat for 12–15 minutes until fork-tender. Drain and let sit for 2–3 minutes.
  2. Roast the Cauliflower and Garlic: Preheat oven to 375ºF. Line a baking sheet with parchment or foil. Chop cauliflower into florets and place on sheet with garlic cloves. Drizzle with olive oil and toss to coat. Roast for 15–20 minutes, until golden.
  3. Process the Cauliflower: Transfer roasted cauliflower and garlic to a food processor. Pulse a few times, then add 1 tablespoon butter and 2 tablespoons yogurt. Continue pulsing until finely chopped, scraping sides as needed.
  4. Make Mashed Potatoes: In a large bowl, combine drained potatoes, cauliflower mixture, remaining butter, and salt. Mash or mix on low speed, gradually adding milk 1–2 tablespoons at a time until desired consistency is reached. Stir in chopped chives.
  5. Serve: Transfer to a serving dish and garnish with more chives and an optional slice of butter. Serve warm.

Notes

  • Use dairy-free butter and yogurt to make this dish fully vegan.
  • Roasting the cauliflower keeps it from getting watery, resulting in creamier mashed potatoes.
  • Customize the texture by adjusting the milk amount to your liking.
