Ingredients
Main Ingredients
- 1 small onion, small dice
- 2 tablespoons extra virgin olive oil
- 4 garlic cloves, minced, fresh
- 1 teaspoon salt, divided
- 4 cups vegetable broth
- 4 large potatoes, peeled and cut into big chunks
- 1 large head of roasted garlic
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon freshly ground pepper
Instructions
- Sauté onion and garlic: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 8 minutes. Then add 1/2 teaspoon of salt and the minced garlic, cooking for another minute to release the flavors.
- Add vegetable broth and boil: Pour in the vegetable broth and bring the mixture to a boil.
- Cook potatoes and season: Add the peeled and chunked potatoes, chopped parsley, freshly ground pepper, and the remaining salt. Bring the soup back to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
- Add roasted garlic: Incorporate the roasted garlic cloves into the soup, either smashing them to distribute the flavor or leaving them whole for a milder taste.
- Thicken the soup: To thicken, remove about 1 cup of the cooked potatoes and mash them in a bowl with a fork. Return the mashed potatoes to the soup and stir well. Alternatively, use an immersion blender to partially blend some of the potatoes directly in the pot for a creamier consistency.
- Serve and garnish: Ladle the soup into bowls and garnish with optional toppings like croutons, shredded cheese, or additional chopped parsley for extra flavor and texture.
Notes
- You can roast the garlic head by cutting off the top, drizzling with olive oil, wrapping in foil, and baking at 400°F (200°C) for 30-40 minutes until soft.
- For a richer flavor, use homemade vegetable broth or add a splash of cream before serving.
- Leftover soup can be refrigerated for up to 3 days and reheated gently on the stovetop.
- To make the soup vegan, ensure the broth and toppings (like cheese) are plant-based.
- Adjust seasoning with salt and pepper to taste before serving.
