Ingredients
Vegetables
- 1 lb Zucchini, sliced 1/2 inch thick
- 1 lb Yellow squash, sliced 1/2 inch thick
Seasoning
- 3 tbsp Olive oil
- 1/2 tsp Italian seasoning
- 1/2 tsp Garlic powder
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
Instructions
- Preheat Oven: Preheat your oven to 425°F (218°C) to get it hot enough for roasting the vegetables perfectly.
- Season Vegetables: In a large bowl, drizzle the sliced zucchini and yellow squash with olive oil. Sprinkle Italian seasoning, garlic powder, sea salt, and black pepper over the vegetables and toss well to ensure all pieces are evenly coated.
- Arrange on Baking Sheet: Spread the seasoned vegetables out in a single layer on a large baking sheet. For easier cleanup, you can line the sheet with parchment paper or lightly spray it with cooking spray.
- Roast: Place the baking sheet in the preheated oven and roast the vegetables for 10-12 minutes until they become tender but still hold their shape.
- Optional Browning: If you prefer more browned, caramelized edges on your vegetables, turn on the broiler and broil for an additional 3-6 minutes, watching carefully to avoid burning.
Notes
- For even cooking, try to slice the zucchini and squash into uniform 1/2-inch thick pieces.
- You can add other herbs like thyme or rosemary for a different flavor profile.
- Use parchment paper or a silicone mat for easier cleanup and to prevent sticking.
- Broil carefully and keep an eye on the vegetables to prevent burning during the optional browning step.
- This dish pairs well with grilled meats, fish, or as a vegetarian main entree with a grain like quinoa or rice.
