Robin’s Egg Soft Baked Cookies are a delightful treat featuring soft birthday cake-flavored cookies topped with colorful blue vanilla frosting, a cocoa paint design, and sprinkled with chopped candy-coated chocolate eggs. Perfect for festive occasions or a fun dessert, these cookies combine tender texture and vibrant decoration for an irresistible snack.

  • Total Time: 1 hour
  • Yield: 12 cookies

Ingredients

Cookie Dough

  • 1 pouch (16.8 oz) Betty Crocker™ Soft Baked Birthday Cake Batter Cookie Mix
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon water
  • 2 eggs

Frosting

  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1/2 teaspoon blue gel food color from 1 box Betty Crocker™ Classic Gel Food Color

Decoration

  • 1 tablespoon cocoa powder
  • 1 tablespoon warm water
  • 1/2 cup small candy-coated chocolate eggs, roughly chopped

Instructions

  1. Preheat and Prepare Baking Sheet: Heat your oven to 350°F. Line a cookie sheet with cooking parchment paper to prepare for baking.
  2. Make the Dough: In a large bowl, combine the cookie mix, softened butter, 1 tablespoon water, and eggs. Use a hand-held mixer on medium speed to blend until the dough forms, about one minute.
  3. Scoop and Bake Cookies: Using a medium-sized cookie scoop or two tablespoons, portion 12 even-sized dough balls. Place 4 to 5 dough balls about 2 inches apart on the prepared cookie sheet. Bake for approximately 12 minutes or until edges turn golden brown. Repeat with remaining dough and cool the cookies completely on a rack.
  4. Color and Apply Frosting: In a medium bowl, add the vanilla frosting. Stir in a little blue gel food color at a time until you reach the desired shade of blue. Frost the cooled cookies evenly.
  5. Create Cocoa Paint Pattern: Whisk together cocoa powder and 1 tablespoon warm water in a small bowl until combined. Dip a dry pastry or paintbrush tip into the cocoa mixture, shake off excess, then pull bristles back and release gently on the frosting to form decorative patterns. Repeat to achieve your preferred design.
  6. Add Candy Egg Topping: Sprinkle the roughly chopped candy-coated chocolate eggs on top of the decorated frosting. Serve and enjoy!

Notes

  • Make sure the cookies are completely cool before frosting to prevent melting and sliding.
  • If you do not have a pastry brush, you can use a clean small paintbrush for the cocoa design.
  • To store, keep cookies in an airtight container at room temperature for up to 3 days.
  • For a more intense blue color, add gel food color gradually to avoid over-coloring the frosting.
