Ingredients
For the Salmon:
- 20 ounces skinless salmon filets (each fillet about 5 ounces or 140 g)
- 1 pinch salt (to season)
- 1 pinch pepper (to season)
- 3 tablespoons lemon juice (divided)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 5 cloves garlic (finely chopped or minced)
For the Salsa:
- 3 tomatoes (finely chopped)
- 2 tablespoons red onion (finely chopped)
- 1 tablespoon fresh cilantro leaves (finely chopped)
- 1/2 Serrano chile or jalapeño (stems, ribs, seeds removed and finely chopped, adjust to heat preference)
- 1 clove garlic (small, crushed)
- 1 tablespoon lime juice
- 1/4 teaspoon salt
To Serve:
- 1 large avocado (sliced)
Instructions
- Prepare the Salmon: Pat dry room temperature salmon fillets with paper towel. Season all over with salt and pepper. Squeeze 1-2 teaspoons of lemon juice over each fillet and rub in the flavor.
- Sear the Salmon: Heat the olive oil in a large non-stick pan or skillet over medium-high heat until hot. Add salmon fillets flesh side down, pressing lightly to ensure full surface contact. Sear undisturbed for 3-4 minutes until crispy and golden.
- Flip and Add Flavor: Flip the salmon and sear the other side for two minutes. Then add the butter, chopped garlic, and remaining lemon juice to the pan.
- Finish Cooking: Continue cooking for 1-2 minutes, stirring the butter and garlic around the fillets as the butter browns slightly. Taste and adjust seasoning with salt, pepper, and more lemon juice as desired.
- Make the Salsa: While the salmon cooks, combine tomatoes, red onion, cilantro, chopped chile, crushed garlic, lime juice, and salt in a bowl. Mix well.
- Serve: Top each salmon fillet with the fresh tomato salsa and avocado slices. Drizzle with the buttery garlic sauce from the pan and serve immediately.
Notes
- Remove salmon from the fridge 15 minutes before cooking to bring to room temperature for even cooking.
- Adjust the amount of chile in the salsa based on your preferred spice level.
- If you prefer, substitute lime juice for lemon juice throughout the recipe.
- Serve with steamed rice or a fresh green salad for a complete meal.
- To ensure the salmon cooks evenly, try not to move it during searing until it naturally releases from the pan.
