These soft, buttery salted caramels are easy to make at home, perfect for holiday gifting, and the perfect bite-sized sweet treat!

  • Total Time: 1 hour
  • Yield: 50 caramels

Ingredients

Caramel Ingredients

  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) light brown sugar, firmly packed
  • 1 (12-ounce) can evaporated milk
  • 1 1/2 cups (354ml) heavy cream
  • 3/4 cup (255g) light corn syrup
  • 1/2 cup (113g) unsalted butter
  • 1 teaspoon fine sea salt
  • 2 teaspoons vanilla extract

Topping

  • Flaky sea salt, for topping

Instructions

  1. Prepare the pan: Line an 8×8-inch baking pan with parchment paper and lightly butter or spray it. Set aside.
  2. Combine ingredients: In a large heavy-bottomed saucepan, add the granulated sugar, light brown sugar, evaporated milk, heavy cream, light corn syrup, unsalted butter, and fine sea salt.
  3. Heat mixture: Place the saucepan over medium heat. Stir frequently until the butter has fully melted and the mixture is smooth and combined.
  4. Cook to temperature: Attach a candy thermometer to the side of the pan, ensuring it does not touch the bottom. Continue stirring constantly as the mixture cooks. Let it reach 240–243°F (115–117°C), which is the firm ball stage for candy. This process can take between 45 to 60 minutes—patience is essential for perfect caramels.
  5. Cool and set: Remove the pan from heat and immediately stir in the vanilla extract to infuse flavor. Pour the hot caramel evenly into the prepared baking pan and use a spatula to smooth the top surface. Let it sit for 10 minutes, then sprinkle flaky sea salt over the top as desired. Allow the caramel to cool completely at room temperature for several hours or preferably overnight to set firmly.
  6. Cut and wrap: Once completely set, use a sharp knife to cut the caramel into bite-sized squares or desired shapes. For storage or gifting, individually wrap each piece in wax paper or cellophane wrappers to keep fresh.

Notes

  • Use a heavy-bottomed saucepan to prevent burning and ensure even heat distribution.
  • Stir constantly during cooking to avoid scorching the caramel.
  • The candy thermometer should not touch the pan bottom or sides to avoid inaccurate temperature readings.
  • Patience during the cooking process is critical; rushing can lead to undercooked or burnt caramel.
  • Storing the wrapped caramels in an airtight container at room temperature will keep them fresh for up to two weeks.
  • You can customize the salt amount on top according to your taste preference.
